Every week I buy at least 1 head of cauliflower because I can make so many different dishes with it. To be honest we never eat cauliflower plain but rather cauliflower rice, mash, steaks, or in casseroles. Below I have 5 different ways you can eat cauliflower while on a low carb or keto diet. 1) Eat Cauliflower Rice
To rice cauliflower all you need to do is put a few raw florets into a food processor and then just pulse until it is in rice-like pieces. You don’t want to over process it so if you have some large chunks leftover, take them out and do them by themselves.

2) Use Cauliflower Cream for soup & casseroles
You can make a cream sauce with cauliflower that is great in soup and casseroles. Usually you boil or cook the cauliflower and then add it to a high speed blender along with some type of liquid (water, cream, broth, etc) and some cheese or spices. This will make a nice creamy addition to some of the soups below or in casseroles.

3) Cauliflower made into Bread and Pizza Crust

4) Try Raw Cauliflower in salads

5) Roast, bread or mash cauliflower
You can make a decadent loaded mashed cauliflower or just roast a whole head in the oven. You can even make breaded cauliflower steaks that are absolutely delicious. The roasting gives it so much flavor.
