I like many people have become enamored with cottage cheese as a way of adding protein to dishes instead of meat. I have always liked cottage cheese so I had no problem with the texture but when I learn how good whipped cottage cheese was I became a bigger fan and then when I learned how to make bread it with it I was completely won over.
