I am a big fan of both whipped cottage cheese and strawberry pretzel salad so I came up with this delicious keto whipped cottage cheese dessert. In this simple recipe, cottage cheese takes the place of cream cheese so it’s lower in fat and tastes lighter than regular pretzel salad.
I also used crunchy buttery pecans to substitute for pretzels, thus making it gluten free. So if you are on a low carb diet this is a great dessert, especially in the summer time. Each serving has just 3g net carbs and 8g protein!
Recipe ingredients I used.
Below you can see the simple ingredients I used – sweetener, plain cottage cheese, strawberry jello, fresh strawberries, pecans, salt and butter.
Sweetener
I love Swerve sweetener but you can use the sweetener of your choice. I especially like the powder sugar sweetener as it mixes better than granular but you can use your keto sweetener of choice.
Cottage Cheese
I love this Good Culture low fat cottage cheese because its low in carbs and is really creamy when you whip it. I found it at Target and my local grocery store so if you can find it, use it. Otherwise use your favorite brand but you might have to adjust the carb count in this recipe.
Fresh Strawberries
Strawberries are a low carb fruit and used in traditional pretzel salad but you could use other fresh fruit like blueberries, blackberries or raspberries. And if you don’t have any on hand you can eliminate it all together.
Jello
Of course I used sugar free strawberry jello but again if you have another flavor you prefer go ahead and use that. I used a 0.3g box by the way.
Pecans and Butter
Pecans seem to be the crunchiest of nuts and I used raw pecans for this recipe. Optional toppings to try are chopped walnuts or almonds. However I think pecans work the best as a pretzel substitute.
Also I used salted butter but you can use unsalted and then just add a bit more salt to the pecans when you make them.
How to make keto cottage cheese jello salad dessert.
Step 1: To make the crunchy topping, heat up a medium skillet to medium heat. Add the butter and once it melts add the pecan pieces and salt. Stir frequently to toast the nuts and once they just start to brown and become fragrant, take the skillet off the stove and pour onto a plate or piece of paper towel and let cool.
Step 2: Make the jello according to package directions and pour into an 8×8 inch baking dish. Add the sliced strawberries and refrigerate until it’s completely gelled.
Step 3: When the jello is just about ready, add the cottage cheese to a food processor or high speed blender. Also add in the sweetener. Blend or mix until smooth and creamy. Taste and see if it is sweet enough for your liking.
Step 4: When the jello has set up, pour or spoon the blended cottage cheese mixture on to the top and spread around as best you can to make a smooth layer.
Step 5: Add the cooled nuts on top and set back in the refrigerator again. This will allow the cottage cheese to get a little firmer though note it has a light consistency and is much looser than a cream cheese layer in traditional strawberry pretzel salad. It’s more like whipped topping.

This keto whipped cottage cheese dessert recipe is both sugar free and high protein. Similar to strawberry prtezel salad but it's low carb for a healthy dessert.
Ingredients
- 0.3 ounce box sugar free strawberry jello
- ½ cup strawberries, sliced
- 2 (5.3 ounce cups) Good Culture low fat cottage cheese (approx 1 â…“ cups)
- ¾ cups raw pecans
- 1 tablespoon butter
- ¼ cup sweetener (I like Swerve)
Instructions
- Make the jello according to package directions and pour into an 8x8 inch baking dish. Add the sliced strawberries and refrigerate until it's completely gelled (about 2 hours).
- While that is gelling, make the crunchy nut topping. Heat up a medium skillet to medium heat. Add the butter and once it melts add the raw pecan pieces and salt. Stir frequently to toast the nuts and once they just start to brown and become fragrant, take the skillet off the stove and pour onto a plate or piece of paper towel and let cool. Set aside for later.
- When the jello is just about ready, make the cottage cheese layer. Add the cottage cheese to a food processor or high speed blender along with the sweetener. Blend or mix until the cottage cheese is smooth and creamy. Taste and see if it is sweet enough for your liking and adjust accordingly.
- When the jello has set up, pour or spoon the cottage cheese mixture on to the top and spread around as best you can to make a smooth layer.
- Sprinkle the cooled nuts on top and set back in the refrigerator again. This will allow the cottage cheese to get a little firmer though note it's much looser than if you had use cream cheese in a traditional strawberry pretzel salad. It's more like whipped topping.
