This past Easter I had forgotten to buy a dessert seeing as I rarely buy sweets (though I love them). So I had all the makings for a strawberry pretzel salad but didn’t have enough time. That’s when I thought I’d make them into individual cups and turn them upside down to make it easier.
These mini low carb strawberry jello desserts were a big hit and took very little time to make. They are perfect for when you crave strawberry pretzel salad but want a sugar free version and in a hurry. And each mini keto dessert has only2.4g net carbs!
Mini Strawberry Jello Desserts
Recipe In A Nutshell
- First make the jello according to the instructions on the box and then pour into 4 custard cups or ramekins.
- While they are setting up in the refrigerator, make the cheesecake topping by creaming together cream cheese, cream and sweetener.
- Also toast the chopped pecans in a little butter and let cool.
- Once the jello has set, pipe or spoon the cheesecake mixture on top and sprinkle the butter pecans.

Keto Ingredients To Always Have On Hand
To make these mini jello desserts I used strawberry sugar free jello, cream cheese, heavy cream, Swerve sweetener, butter and pecans. These are ingredient’s I always have on hand for low carb recipes.
I have many no bake keto cheesecake desserts on this blog which are essentially the cheesecake layer of this dessert. And nuts are great as low carb crusts for desserts or in savory dishes like cauliflower rice pilafs or as a topping for fish. And of course sugar free jello always comes in handy for a sweet low carb treat.
Let’s Make These Mini Strawberry Jello Desserts!
First you make the sugar free strawberry jello according to the directions on the box but pour them into 4 dessert dishes. I used custard cups that I had for my make ahead omelets in a jar. I’m finding them very useful especially since they come with lids.
While the jello sets up in the refrigerator you can make the cheesecake topping.
Making The Keto Cheesecake Topping
This is a basic no bake cheesecake topping that you can use in a variety of ways. All you need to do is first whip the cream cheese in a mixing bowl. Then add in the heavy cream and Swerve sweetener and mix until nice and creamy like the picture below.
Place in the refrigerator until you are ready to use. OR make it a few minutes before the jello is ready.
Making The Butter Pecan Topping
I discovered that roasted pecans with butter and salt taste much like pretzels. For instance this honey mustard pecans recipe is a great substitute for honey mustard pretzels. And these chocolate covered pecans taste like chocolate covered pretzels but both recipes are low carb!
So to mimic the pretzel layer of strawberry pretzel salad I used pecans. Just chop the pecans and toast them with a little butter in a skillet. Let them cool while the jello is setting.
Putting It All Together
Once the jello is set, pipe or spoon the cheesecake topping and sprinkle the cooled pecans on top. That all there is to it.
I recently bought some extra large icing tips to pipe this cheesecake topping and for a cupcake recipe I have coming soon. Using an icing bag gives simple desserts like this a little something special but you can just spoon some on top if you don’t want to bother.
Recipe Notes And Tips
- I used strawberry sugar free jello to be like the traditional strawberry pretzel salad. However you could use any flavor really. Lemon would be nice with some lemon zest as would orange or lime. Raspberry and cherry are good options too.
- I did not use any fresh strawberries because I didn’t have any on hand. However you can add a little to the jello when you make it. Or sprinkle some chopped strawberries on top if you wish.
- If you don’t have pecans you can try some walnuts, almonds or hazelnuts. However pecans taste the most like pretzels.
- You could probably make this in one large pan but make sure the jello layer is fully jelled. Also make the cream cheese layer right before you spread it on the jello as that might be difficult to do. And if you refrigerate it, it will get harder and more difficult to spread.

They are really easy to make and you have the strawberry jello, creamy cheesecake filling and crunchy buttery pecan topping to make a delicious keto dessert! Using items you probably have on hand these sugar free treats have only 2.4g net carbs!
Ingredients
- 1 (0.3oz) box of sugar free strawberry jello
- 2 cups of boiling water
- 4 oz cream cheese, softened
- 6 tablespoons Swerve sweetener
- ½ cup heavy cream
- ½ cup pecans, chopped
- 1 tablespoon butter
- â…› teaspoon salt
Instructions
- Make the strawberry jello according to directions and pour into 4 custard cups or ramekins. Refrigerate until firm.
- In the meantime add softened cream cheese to a mixing bowl and beat until creamy. Add in the Swerve sweetener and cream and whip until creamy. Refrigerate until ready to use.
- Also add chopped pecans to a skillet with butter and salt and cook until slightl browned and fragrant. Set aside and cool before using.
- When jello is set, pipe or spoon cream cheese mixture on top and sprinkle with buttered pecans. Refrigerate until ready to serve.
