While I’m not usually a person who likes lime flavored desserts, I do love them when the are paired with a coconut flavor like this key lime pie cocktail I made last year. So today I made this keto coconut lime ice cream in my Ninja Creami ice cream machine and I just loved the tropical flavors together!
The keto dessert only needs 4 simple ingredients and creates a smooth and creamy ice cream. It tastes like a premium ice cream you would buy in the grocery store. You would never guess it’s sugar free, low carb but also high protein. Each serving has 4.3 grams net carbs and 14.5 grams protein.

A quick note about the Ninja Creami ice cream maker.
To make this ice cream recipe you need to use the Ninja Creami ice cream machine. I bought one over a year ago and I could not be happier with the purchase. You can create such delicious keto sweet treats and I have a big sweet tooth.
It works differently than traditional ice cream machines in that you freeze the base then run it through the machine for fresh churn ice cream in a few minutes. Other machines you have to freeze a bowl then add the base and churn for 30 minutes. The Ninja Creami method seems to create much better ice cream in my opinion.
Also this machine makes a lot of different frozen treats like sorbet, smoothie bowls, milkshakes, etc. If you have any questions about it, just drop a comment below and I’ll try to answer them as best I can.
Recipe ingredients I used and substitutions.
I only used 4 simple ingredients for this ice cream recipe and they were sugar free lime jello, vanilla protein powder, coconut milk and vanilla extract.
Sugar Free Lime Jello
This product works for a couple reasons. It provides the perfect lime flavor but also sweetness and it helps with the texture because of the gelatin. You can use any brand you want but there are no substitutions.
If you want to use unflavored gelatin you could possible try to recreate the flavor. You could use fresh lime juice and lime zest but would also have to use a low carb sweetener and I’m not sure of the amounts but you could probably do it.
Canned Coconut Milk
Below you can see I used Thai kitchen canned coconut milk and it was great because it is fairly low in carbs and added a lot of the creaminess that you would normally get from heavy cream. This is a great dairy free substitute but the coconut flavor is necessary to get that key lime pie flavor. You can also use lite or full fat coconut milk just as long as it’s from a can.
So if you were to substitute with another milk substitute you would have to also add some coconut flavor extract and it might not be as creamy unless you were using a mixture of heavy cream and almond milk or other milk substitute. You could also use a can of coconut cream. Just make sure to shake well first and use the whole can.
Vanilla Protein Powder & Vanilla Extract
I love IsoPure vanilla protein powder because it’s low in carbs and tastes good to me. You can use any kind of vanilla protein powder you want. You might want to check the labels for the carb count though if you are on a low carb diet. And the vanilla extract is just standard and most people have this.
How to make keto coconut lime ice cream in the Ninja Creami.
Step 1: Get out a medium microwave safe bowl and add ½ cup of creamy coconut milk. Microwave for 30 seconds or until the milk is hot but not quite boiling.
Step 2: Take it out and pour into a high speed blender along with the sugar free jello. Blend for a few seconds until the jello is dissolved. Note you could also do this by hand with a whisk. I just like the blender so there are no lumps.
Step 3: Add the rest of the coconut milk, protein powder and vanilla extract and blend for a few seconds until everything is well combined. Pour ice cream mixture into the pint container that came with the Ninja Creami machine.
Step 4: Place on the storage lid on the container and place in the freezer. Make sure to put it on a level surface so it doesn’t freeze unevenly. Freeze for 24 hours or overnight.
Step 5: When ready to eat, take off the store lid and place in the outer bowl assembly and attache the lid. Place in the machine and hit the LITE ice cream button. When it’s done it might be powdery in texture as can be seen below.
Step 6: Place the lid back on and put in the machine. Hit the LITE button again and run it through the cycle. It should have a nice and creamy texture at this point but if it isn’t you can add a tablespoon of coconut milk or almond milk and run it through one more time until it’s the consistency you are looking for. I only had to run it through twice but it can take a couple times.
And that is all there is to this coconut lime protein ice cream. Please scroll down to view the printable recipe card. I can get at least 2 servings per container. If you don’t eat all of it at once then place the storage lid back on and freezer. When you are ready to eat it again, run it through the machine again using the LITE button function.
Mix ins you might like to add to this recipe.
I would suggest just using these after you spoon some into bowls. If you run it through the machine after it’s frozen, it might pulverize them too much. Here are a few options that might go good with this recipe.
- toasted unsweetened shredded coconut flakes
- crushed nuts like walnuts, pecans, almonds (try toasting first for more flavor)
- crushed keto graham crackers or similar tasting cookies (these Simple Mills cookies are fairly low carb if you are just using a couple)

Keto Key Coconut Ice Cream Recipe
This keto coconut lime ice cream recipe is made in the Ninja Creami machine. It just needs 4 simple ingrediets and creates a healthy low carb treat. It's also sugar free and high protein with 14.5 grams of protein.
Ingredients
- 1 can coconut milk (roughly 13.66 ounces)
- 0.3 ounce box sugar free lime gelatin
- 1 scoop vanilla protein powder
- 1 teaspoon vanilla extract
Instructions
- Add ½ cup of coconut milk to a microwave safe bowl. Cook for 30 seconds or until the milk is hot but not boiling. Add the blender container.
- Add the box of gelatin and blend on low for a few seconds until the gelatin dissolves in the hot milk. Then add the rest of the coconut milk, vanilla extract and protein powder. Blend for a few seconds to combine.
- Pour ice cream mixture into the pint container that came with the Ninja Creami machine. Put the storage container lid on top and place in the freezer. Make sure to place it on a level surface. Freeze overnight.
- When ready to eat, take of the lid and place in the outer assembly bowl. Attach the lid and load into the Ninja Creami machine. Hit the LITE button and run through the cycle. When it's done check to see if it's smooth and creamy. If not run it through the LITE cycle again. When done check again and if it's still powdery add a tablespoon of almond milk or other liquid. Place back in the machin and run through the LITE cycle. It only took me 2 cycles.
- Spoon homemade coconut ice cream into bowls and enjoy! I get 2-3 servings per pint container. If you have leftovers store in the pint container and freeze. You will have ot run it through the machine when you are ready to eat it again.
