My freezer is full of keto sweet snacks because I have a huge sweet tooth. Sometimes I really crave things like these keto chocolates with almonds after a meal. They are filling and sweet and I keep them in a baggie in the freezer and grab a couple when I’m craving candy.
I like to call these freezer candy because they base has coconut oil which melts easily. This is beneficial to me because for some reason when you keep them in the freezer they are less accessible which works for me.
I used sliced almonds and toasted them to give them a little more flavor. They add a bit of crunch but not too much like you would with whole almonds. There is definitely more chocolate to almonds in these keto sweets.
Recipe ingredients I used and substitutions.
The 5 simple ingredients I used for this recipe was sweetener, coconut oil, almond slices, cocoa powder and bakers chocolate.
Cocoa Powder and Bakers Semi Sweet Chocolate
I love Divine cocoa powder because it has less carbs than regular cocoa powder you get at the grocery store and it’s has a lot better flavor. Actually you can buy this brand at our bigger grocery stores so it might be available where you are. You can substitute with regular cocoa powder though.
The bakers chocolate is not an unsweetened bar but has sugar and is the source of cocoa butter necessary for this recipe. I bought this products at Aldi but I don’t know if they have it all the time. You could use any dark chocolate bar tthat is low in carbs or even sugar free chocolate chips. Choc Zero and Lilly’s are great keto friendly choices.
Raw Unsalted Almonds
I love sliced almonds for this treat because you use less than if you were using whole almonds. I bought mine at Aldi but most grocery stores sell them. I used them in all kinds of dishes like cauliflower rice pilaf and big salads or in sweet dishes like this one. You can substitute with chopped almonds if you can’t find sliced.
Coconut Oil and Swerve Sweetener
Coconut oil is essential to this recipe but if you had to substitute you could possible use butter though I have not tried it yet. And I love Swerve sweetener but you can use your favorite sugar substitute
Other ingredients you could use are vanilla extract or other flavored extracts, chopped roasted seeds, toasted unsweetened coconut, cocoa nibs, etc. All of these are low carb additions.
How to make these easy keto chocolates with almonds.
Step 1: Get out a medium skillet and heat to medium heat. Add the raw almond slices and toast in the dry pan for a few minutes until they start to turn golden brown. Take them off the stove and pour into a paper towel to cool off.
Step 2: Add to a microwave safe bowl or a glass pyrex measuring cup the sweetener, cocoa powder, coconut oil and chocolate bar. Cook for 30 second intervals until the bar is almost done melting. Take it out and continue to stir and the ingredients will continue to melt.
Step 3: I love this silicone mini muffin mold because it’s easy to pop out the finished product and it makes uniform pieces. You can use a regular mini muffin tin or even ice cube trays or candy molds. Pour a little of the liquid chocolate about half way. Then add the roasted almonds.
Step 4: If you want you can sprinkle a tiny bit of salt over top to bring out the sweetness but this is optional. Sometimes I do this, sometimes I do not. Place the mold or tin in the freezer for an hour or two until they harden.
Step 5: When frozen solid, take them out of the mold and store in an airtight container or ziplock baggie and keep it in the freezer.

I go on kicks where I eat these all the time. there is something about the nuts and coconut oil that fill me up for some reason. Regardless they are really easy to make and very tasty too!
