Do you know that recipe that I think just about everyone makes? We call it bark, others call it toffee or crack. It’s saltines with a butter and sugar syrup pour over and baked and then topped with chocolate chips. These low carb chocolate toffee bars are my low carb version of that. It’s not exactly like bark but it’s very easy and very good. All you need is 4 ingredients and you can make this tasty low carb candy. Here we go!
Low Carb Toffee Bars Ingredients
The 4 ingredients you need to make this sugar free candy are pecans, butter, Swerve brown sugar and Lilly’s stevia sweetened chocolate chips. This is my first time using Swerve brown sugar and I am very pleased. It has no net carbs and looks just like brown sugar. You can find all of these products on my Amazon page if you are interested.

I just bought this at a Pampered Chef party. It’s a silicone mold that is bar shaped. This is the first time I used it and It’s great because you can bake with it too. I can’t wait to make some granola bars for my son with this or just some chocolate bars. You don’t have to have this mold to make this toffee recipe of course. You can make this recipe using an 8×8 baking dish or a using a small cookie sheet. When using either of those, line with foil and spray before adding the ingredients.
Low Carb Chocolate Toffee Bar Recipe
First thing you want to do is chop the pecans. I just do this quickly in my mini food processor. Below you can see the coarse consistency that is not quite a flour. However I think next time I might try to make it finer to see if it makes more of a cracker consistency or not. Chop the nuts then distribute them evenly in the mold or on the cookie sheet or baking dish.
Next you make the toffee syrup which is super easy. Just melt a stick of butter with a half cup of Swerve brown sugar on the stove. Whisk as it thickens and becomes syrupy. Then pour it over the pecans. (see below)
Now we place this in the oven and bake for about 13 minutes. Let them cool and then put them in the freezer for 1 hour so they solidify. Take them out of the freezer and start making the chocolate.
Melt the chocolate chips in a microwaveable bowl for about 30 to 60 seconds. Mix until it’s nice and smooth and then carefully spread it on top of the bars.
Once the chocolate is dry (about an hour) your bars are ready. Take them out of the mold or if you made them in the cookie sheet or baking dish, take them out and crack them into pieces.

Ingredients
- ½ cup butter
- ½ cup Swerve Brown Sweetener
- 1 cup raw pecans, finely chopped
- ½ cup Lillys stevia sweetened chocolate chips
Instructions

Preheat oven to 375 degrees F.

In a food processor, chop the pecans until finely ground. If using a mold, distribute the pecans evenly in each section. If using a baking dish or cookie sheet, use a small one and first line with foil. Then spray the foil before adding the nuts in a thin layer.

Next put the butter and Swerve in a small sauce pan. As the butter and sugar melts, whisk until it bubbles and thickens.

Pour the syrup over the pecans then place in the oven and bake for about 12 - 13 minutes.

Take them out and let them cool before placing into the freezer for 1 hour. This will solidify the bars completely.

After an hour take them out and make the chocolate. Place the chips into a microwaveable bowl and cook for 30 - 60 seconds. Mix well so it's melted and smooth. Spread over the bars.

Wait for about an hour or so until the chocolate dries. Store in the refrigerator.

Why is the oven turned on? Are the nuts to be roasted first?

Hi Doreen in the recipe card you can see that you bake these toffee bars. After you put them in the mold and pour the butter mixture over top you bake them. Hope that helps!
