Lately I have been enamored with veggie steaks. Last week I posted a most delicious cabbage steak with meat sauce and before that I made a keto cauliflower romano steak. However these cheesy air fryer cauliflower steaks are made even easier because of my favorite kitchen appliance – the air fryer.
I wanted this recipe to have the flavors of scalloped potatoes so I used green onions, cream and a combination of gruyere and Swiss cheese. Then I roasted it in the air fryer to make for a tasty and cheesy veggie steak!
Now of course these do not taste like steak but they are in steak form and make for a nice meatless or vegetarian meal or healthy side dish. It’s also low carb and low calorie. Each steak has just 127 calories and 3 grams net carbs and you only need 4 ingredients!
Recipe ingredients I used and substitutions.
I only used 4 simple ingredients to make this veggie dish – cauliflower, green onions, gruyere/swiss cheese and heavy cream.
Cauliflower Steaks
You need to use fresh raw cauliflower for this dish because you want to cut them into big steaks. I was only able to get two good size steaks and two smaller ones from the ends with the small head of cauliflower I had.
I just cut it down the center and the cut the two steaks from the inner most side as you can see in the picture below.
Gruyere/Swiss Cheese
I use a delicious shredded cheese I buy at Aldi which is a Gruyere Swiss cheese blend. You can use either or both of these cheeses.
Other cheeses you can try are a sharp cheddar, parmesan, romano, asiago, gouda, etc. You want something that has a strong cheesy flavor and is not just melty like mozzarella cheese.
Green Onions
I like green onions best in this dish because it is what I use in my scalloped potatoes recipe. You could use yellow onion or even onion powder but green onions or even scallions would be best.
Heavy Whipping Cream
Again I used this because it’s what I usually use for scalloped potatoes. It soaks in the nooks and crannies of the cauliflower and combined with the gruyere adds extra flavor. If you don’t have any you could skip it but it is worth adding if yo do have some. Half and half would work as well. Don’t both with other milk alternatives.
Note if you want you can play around with all kinds of flavor combinations with different spices and cheeses. You can try grated parmesan cheese and rosemary, onion powder and thyme with the Swiss for a French onion taste, taco spice mixture and cheese blend for Mexican flavors, etc.
How to make keto cheesy air fryer cauliflower steaks.
Step 1: Take off the outer leaves and with a large sharp knife, cut the cauliflower head in half. Then cut each half one more time to make 4 steaks. For me the outer portions fell apart because I used a small head of cauliflower. But it doesn’t really matter I put the leftover florets together and treated them like another veggie steak.
Step 2: Spray the air fryer basket then place the cauliflower slices in the basket. Spray all of the vegetable pieces with nonstick cooking spray or you can also brush with olive oil if you want. Sprinkle salt and black pepper over top.
Step 3: Set the temperature to 400°F and roast for 15 minutes.
Step 4: Then flip the steaks over. Spoon the cream over all of the cauliflower carefully so you get the cream in the nooks and crannies. Then sprinkle the shredded cheese and top with some chopped green onions.
Step 5: Place basket back in the air fryer for 5-10 minutes more until golden brown and the cauliflower is fork tender. Cooking time may vary depending on the thickness of the steaks.
Take the crispy cauliflower steaks out of the basket and place on a platter or plate and serve. If you want you can garnish with some fresh parsley leaves or even some more green onion.
To make this is the oven, the rule of thumb is to increase temperature of oven 25° and increase the time 20%. So for this recipe, preheat oven to 425°F.
- Place the steaks on a sprayed baking sheet, then spray with more cooking spray and season with salt and pepper. (Can also brush with olive oil.)
- Place in preheated oven and cook for about 18 minutes.
- Flip the steaks over and pour the cream over top then sprinkle cheese and onions after that.
- Place back in the oven and bake for 7-12 minutes until the cauilflower is fork tender.

Keto Cheesy Air Fryer Cauliflower Steaks Recipe
These cheesy air fryer cauliflower steaks make for a healthy and tasty low carb dinner or lunch. Using only a few ingredients you can create tender cauliflower topped with cheese for a tasty meatless meal!
Ingredients
- 1 small head cauliflower (4 steaks per head)
- ¼ cup heavy cream
- 2 green onions, diced
- ½ cup shredded gruyere and Swiss cheese
- salt and black pepper to taste
Instructions
- Spray the basket of your air fryer with nonstick spray and set aside. Take off the outer green leaves then using a sharp knife cut the cauliflower heat in half. Then make two more slices to make 4 steaks. The end pieces might fall apart but just keep them togethr as best you can.
- Place the steaks in an even layer in the air fryer basket. The end pieces might fall apart but just keep them togethr as best you can.. Spray the steaks with nonstick cooking spray and sprinkle salt and black pepper over top. Cook at 400°F for 15 minutes.
- Take the cauliflower steaks out and flip over. Pour the heavy cream carefully over each steak. Then top with the cheese and finally the diced green onion. Place back in the oven and roast for 5-10 minutes more until the cheese is golden brown and the cauliflower is fork tender.
- Take out and serve. You can garnish with fresh herbs like parsley or even a bit more of the green onion if you wish. Store leftovers in an airtight container. You can reheat in the microwave or air fryer.
