Recently I read an article about the benefits of gelatin. I’ve heard in the past that it was good for gut health and other such things so I have 2 big containers of it and decided to put them to use. Last week I made hurricane shots and this week I am making these low carb tiramisu flavored gelatin desserts. Gelatin is so versatile and makes great low carb treats! Each of these desserts has only 2.0g net carbs!

What Kind Of Gelatin To Use

I have long been a fan of Great Lakes gelatin products because they are made from grass fed cows. At one point they were the only company I knew that did that and they were very big in the Paleo community. Now there are more brands but I stick with this one. I have two basic kinds of Great Lakes products: collagen hydrolysate and unflavored gelatin.

The collagen hydrolysate (green can) does not gel and is a great protein addition to drinks and shakes. Also:

  • Helps regulate the body’s metabolism
  • Builds connective tissue in hair, skin, and nails
  • Good source of protein
  • Cold water soluble

Unflavored gelatin (red can) does gel.  It has all the same benefits as the collagen hydrolysate in the green can be used to make everything from  gummy bears to marshmallows. This is the one I used today. That being said you can use any unflavored gelatin you have on hand.

The Low Carb Chocolate I Used

A word about the chocolate shavings on top. I used a Moser Roth 85% cacao chocolate bar I buy from Aldi. You can find it along with the Great Lakes products on my Amazon page but I buy it at Aldi.

They come in 5 small bars to a pack and each bar has 6g net carbs. I only used ½ bar for all 6 desserts. I used a peeler to make the curls and a zester to make the chocolate dust. You can use any kind of dark chocolate you want but just watch the carbs.

Low Carb Tiramisu Gelatin Recipe

  1. For the first layer, brew strong coffee.
  2. While the coffee is brewing, add cold water, cocoa, Swerve sweetener and gelatin to a pyrex measure cup and whisk well for a minute.
  3. Add hot coffee to gelatin and whisk to dissolve gelatin. Then add cream and coffee syrup and mix again. Taste for level of sweetness and adjust if necessary.
  4. Pour into containers and refrigerate until set.
  5. For the second layer, add cold water to a pyrex measuring cup along with gelatin and Swerve sweetener. Whisk for 1 minute.
  6. Pour hot water and whisk until the gelatin is dissolved. Add heavy cream and S’mores syrup. Mix well. Taste for level of sweetness and adjust if necessary.
  7. Pour over coffee layer and refrigerate until set.
  8. Use a peeler to shave dark chocolate curls and a zester to make chocolate dust on top and then serve.

Other Notes About This Recipe

I used Torani sugar free syrups (Coffee and S’mores) in both layers. If you don’t have any of those just add a bit more sweetener (Splenda, Swerve or liquid stevia) to reach your desired love of sweetness.

That’s all there is to it for these low carb tiramisu flavored gelatin desserts. No layer of cake necessary to get all of that tiramisu flavor. The nutrition for 1 dessert is:

198 cals / 19.6g fat / 12.6g carbs / 10.6g fiber / 3.6g protein = 2g net carbs

And check out my friend Mira’s easy tiramisu recipe for more of these delicious flavors.

Thanks Patti. They are pretty big portions too. I ate half of one for dessert when I made them.
