Recently I’ve been trying out a lot of different protein powders and one that I really like is this birthday cake flavored one. I’ve been making shakes, smoothies and today I made this keto birthday cake cottage cheese protein dessert.
It’s kind of like a low carb high protein pudding in that it has a really thick and smooth consistency and it’s sweet but made with whipped cottage cheese and protein powder. This is something that I would eat for breakfast, as a snack, or a healthy dessert. It just takes minutes to make and is very satisfying to eat!
Recipe ingredients I used and substitutions.
The simple ingredients I used to make this recipe was protein powder, plain cottage cheese, vanilla stevia, Swerve and vanilla extract. I also added some sprinkles for color but they surprisingly add quite a few carbs. More about that later.
Birthday Cake Protein Powder
I bought Legion brand birthday cake protein powder. I really like this flavor for some reason and find that it’s very versatile. It’s different that straight vanilla flavored powders in that it tastes like cake – sugar, butter and vanilla notes.
There are other brands that make this flavor. Here are a few others to try. You could always use vanilla protein powder but it won’t have quite the same cake batter flavor.
Good Culture Cottage Cheese
This is my new favorite brand of cottage cheese in that it’s low carb, has active cultures and whips up to a nice and creamy texture. You can really use any brand you want though. Also you can use low fat or full fat cottage cheese.
If you wanted a substitute for this ingredient you could use a plain Greek yogurt but it might be more tart so you will have to probably add more sweetener.
Vanilla Stevia & Vanilla Extract
My favorite brand for liquid stevia is Sweetleaf Vanilla Stevia and I have used it for years and years. I like it because it has a good flavor and the added vanilla means you don’t usually have to add vanilla extract. Though I did for this recipe because I really wanted that vanilla birthday cake flavor.
Sweetener
I ended up adding a bit more sweetness with a tablespoon of Swerve sweetener. You could add a bit more stevia or eliminate the stevia and add more of your favorite sweetener.
I personally like the combination of erythritol and stevia together and I wanted this to be like a sweet dessert. You can play around with the sweetness level to satisfy your personal taste.
If you don’t want to use protein powder.
If you are against protein powder for some reason and just want to use the cottage cheese as your main source of protein another option is to use a birthday cake batter flavoring. While the protein powder adds flavor, protein and thickness, the cottage cheese on its own is pretty thick when whipped and has a good protein content.
So for this version you can add the sweetness and a birthday cake batter flavoring to get a similar taste though I have not used this particular product before.
How to make birthday cake cottage cheese protein dessert.
This is a really simple keto sweet treat and should only take 5 minutes to make.
Step 1: Get out your food processor or blender and add the plain cottage cheese. Blend this for a few seconds to get it nice and whipped. Make sure there are no lumps if you can.
Step 2: Next add the protein powder, stevia, vanilla extract and sweetener if using. Blend until everything is combined. You might want to taste the cottage cheese mixture with just the stevia and then add the sweetener if you want to it sweeter.
Step 3: Once you get it the way you want it to taste, spoon into a dessert glass or spoon the bended cottage cheese mixture into a bowl and enjoy! Store leftovers in an airtight container and refrigerate. Please scroll down to view the printable recipe card.
I had some sprinkles in the picture below to make it look more festive. I’m not much of a sprinkle fan but they do make keto sprinkles. If you want to add some keto sprinkles try this brand. Otherwise skip them and enjoy!
Other toppings you can try are keto friendly chocolate chips, graham cracker crumbs, fresh fruit like strawberries, blueberries, blackberries, etc.
And if you want to make it a chocolate birthday cake batter you can use some unsweetened cocoa powder. You might have to add a bit more sweetener to balance the bitterness of the cocoa powder.
