I am on a keto fudge kick lately. Part of the reason is that my father in law really likes sweets but he’s a diabetic so sugar free fudge is a treat he can eat. And of course I have a sweet tooth so honestly I really enjoy it too and it’s super easy so why not?
Today I was playing around and made this keto peanut butter banana protein fudge. This recipe takes no time at all to whip up though you have to let it freeze to get hard. You only need a few ingredients, it’s high in protein, low in carbs and sugar free for those watching your sugar. One piece of this low carb fudge is only 0.7g net carbs and 4.1g of protein.
What You Need To Make Easy Sugar Free Fudge
The basic ingredients to make sugar free fudge are butter, nut butter and Swerve confectioners sweetener. So for this recipe I used peanut butter for the nut butter and in addition for the banana flavor I use IsoPure banana protein powder and banana extract.
I recommend both of these specific ingredients because the peanut butter is very overpowering so you need a lot of banana flavor and because these products have 0 carbs.
Let’s Make Some Protein Fudge!
If you’ve seen my other keto fudge recipes you know that all you need to do is whip together the ingredients and spread it in a pan to freeze.
Today I use a food processor and added the peanut butter, Swerve sweetener, banana protein powder, butter and banana extract and then mixed until nice and creamy like below.
You could also use a mixer but for some reason I decided on the mini food processor because I was used to using this when I made my other fudge recipes and had to grind nuts to make the nut butter.
Next spread the fudge batter into a baking dish or container of choice and freeze for an hour or two until hard.
NOTE: I usually just spoon it right into a baking dish but my last batch I actually put a piece of parchment paper to cover the bottom and hang over the sides. It was SO MUCH EASIER to get out that I will be doing that from now on.
Recipe Tips & Notes
- For the peanut butter, make sure you use the lowest carb peanut butter you can find. I like Aldi’s Simply Nature no sugar added creamy peanut butter.
- I also really like Swerve confectioner sweeter as it mixes well whereas granular sweetener may make it grainy because you are not heating it to make it dissolve.
- You can use any protein powder you want, but I like IsoPure banana because it has 0 carbs and the banana flavor is a nice addition.
- The banana extract is necessary to add maximum banana flavor because peanut butter can be overpowering.
- I like to store this fudge in the freezer. You can also store it in the refrigerator but it will last longer in the freezer. You cannot however keep it on the counter because it will get too soft.
- To make it easier to get out of the container, put a piece of parchment paper to cover the bottom and hang over the sides. Then you can just lift it out of the container and cut into pieces.

1/2 swerve. 1/2 cup. tbl. t. ??
Denise
Hi Ed, thanks so much for pointing that out. It’s 1/2 cup of Swerve. It took me awhile to even know what you were talking about. So sorry for the mistake. Hope you like it.
Barakas
Would I be able to use well ripened bananas instead of powder? Also maybe some dates instead of the Swerve.
Denise
Hi Barakas, if you don’t care about carbs, you can try the dates and bananas. I’m sorry I have not tried these but I have made brownie bites with dates, cocoa powder and walnuts. They aren’t low carb but they were yummy. Good luck!
