A few years ago there was a popular baked feta pasta recipe going around and honestly it is a delicious dish but being low carb I didn’t want to use regular pasta. So today I made a version with cabbage noodles instead!
This keto cabbage noodles with baked feta recipe is not only super easy to make, but it super flavorful. The creamy feta cheese and sweet roasted tomatoes along with the garlic and herbs is the best flavor combination. Best of all this dish has just 6.8g net carbs and only 205 calories so it’s low calorie too!
And the cabbage noodles have great texture and taste better than zucchini noodles in my opinion though I do have a zucchini noodle version that I made in the air fryer so check that out too! Both are delicious recipes.
Recipe ingredients I used and substitutions.
The simple ingredients I used were feta cheese, green cabbage, olive oil, fresh garlic cloves, grape tomatoes, oregano, salt and black pepper. I also used hot pepper chili flakes for some heat but you can eliminate that if you don’t want the heat.
Green Cabbage
While there are a variety of different cabbages at the grocery store I think regular green cabbage makes the best noodles. It’s the way you cut them in thick strips that makes it have the texture of noodles when it’s cooked.
However if you wanted to substitute with zucchini noodles or any other low carb noodles like shirataki noodles or palmini noodles. You would want to make them separately and then just mix in after you have baked the rest of the ingredients.
Feta Cheese
You have to use a block of feta cheese and this is easy to find at most grocery stores. In a pinch you could use crumbled but it’s better with the block. And while normally I would suggest goat cheese as an alternative to feta cheese, it wouldn’t be the same in this recipe.
Grape Tomatoes
I like grape tomatoes because they hold their shape best when roasted and they have a sweetness that works perfectly with the other flavors of this dish. You can also use cherry tomatoes but I would not chop up regular tomatoes.
Garlic and Spices
Fresh garlic is one of the essential ingredients as it adds tons of flavor. I also used dried oregano but if you want to use fresh you can. The rule of thumb is a ration of 3 to one of fresh to dried herbs. So 3 teaspoons of fresh oregano equals 1 teaspoon of dried oregano.
You could also substitute the dried oregano with basil or Italian seasoning if you want. The oregano has more a Greek flavor to me and these other spices would have more of an Italian flavor.
Lastly I like the addition of the hot pepper flakes for a bit of heat but if you don’t want to use that you can skip it. But it is nice if you can use it.
How to this make keto cabbage noodles with baked feta recipe.
Step 1: Preheat oven to 425°F. Spray a rimmed baking sheet with nonstick cooking spray and set aside. You could also use a large baking dish if you want.
Step 2: Slice the cabbage into long thick pieces like a thicker fettuccine noodle. Place into a microwave safe bowl with 2 tablespoons of water and cook for 5 minutes in the microwave.
Step 3: When done, drain the excess water out of the bowl and then add the tomatoes, olive oil, crushed garlic and spices. Mix well to combine.
Step 4: Spread the cabbage mixture onto the prepared baking sheet and spread into a single layer. Make a whole in the middle of the mixture and place the block of cheese. Using a spoon or spatula try to scrape up the last bits of oil from the bowl and spoon over the cheese block.
Step 5: Place the cookie sheet in the oven and bake for 18-20 minutes until the tomatoes have blistered and the cheese starts to brown. Note cooking time may vary.
Step 6: Take out of the oven and you can either mix together the creamy cheese with the rest of the ingredients right on the baking sheet. Or you can put it in a bowl and mix it in there.
And if you want you can garnish with fresh basil leaves or even fresh parsley. If you want to wanted to add a protein to this dish, some delicious options would be cooked chicken or shrimp. Both would go nicely.

Keto Cabbage Noodles with Bake Feta Recipe
This keto cabbage noodles with baked feta cheese recipe is so flavorful and only 205 calories and 6.8g net carbs. This fabulous recipe is full of creaminess and spice with only using a few ingredients!
Ingredients
- 4 cups cabbage, sliced into noodles
- ¼ cup olive oil
- 2 cups grape tomatoes
- 2 cloves garlic, crushed
- 4 ounce block feta cheese
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon hot pepper flakes (optional)
Instructions
- Preheat oven to 425°F. Spray a rimmed baking sheet with nonstick cooking spray. You could also use a large casserole dish.
- Chop the cabbage into long thick noodles. In a large microwave safe bowl add the cabbage slices along with 2 tablespoons of water. Cook in the microwave for 5 minutes.
- When done cooking drain all the excess water from the bowl. Then add the tomatoes, olive oil, crushed garlic and spices. Mix well to combine. Add the hot pepper flakes too if using.
- Spray the cabbage mixture onto the cookie sheet into a single layer. Make space in the middle and add the block of feta cheese. Using rubber spatula or spoon, scape up the excess oil from the bowl and spoon over the feta cheese.
- Place the prepared baking sheet into the oven and cook for 18-20 minutes or until the tomatoes have blistered and the cheese has turned golden brown.
- Take out of oven and either mix together on the baking sheet or spoon everything into a large bowl and mix in there. Serve with a simple salad to complete the meal. Store leftovers in an airtight container.
