One thing I’ve learned from eating vegetable noodles is that they can be quite tasty. Especially if you put very tasty sauces on them! Today I was in the mood for some keto chicken Alfredo with zucchini noodles.
This was a really quick and easy low carb dinner that was almost as good as the real thing. The rich and creamy sauce comes together in minutes and if you use leftover chicken or rotisserie chicken you can create this delicious meal in about 15 minutes!
You could use this keto Alfredo sauce in may different ways and I’ll show you later on in the post. So let’s get cooking.
Recipe ingredients I used and substitutions.
You just need a few simple ingredients to make this decadent keto alfredo sauce – cream cheese, heavy cream, butter, fresh garlic, salt, black pepper and parmesan cheese. The other ingredients I used was a cooked chicken breast and zucchini noodles.
Cream Cheese & Heavy Cream
The cream cheese is used to thicken the sauce and for creaminess. You could maybe use cottage cheese or cashew cheese as a dairy free substitute but I have not tried it. And while I often use coconut milk as a substitute for heavy whipping cream, I don’t think the coconut flavor would work here. You could use half and half though.
Fresh Parmesan Cheese
I like hand grated parmesan cheese in recipes like this because it melts better and has more flavor in my opinion. However you could definitely use grated parmesan cheese you find in a canister. You could also substitute with asiago or romano cheese if you wish.
Zucchini Noodles
This is my go to vegetable noodle but you can use any kind keto pasta you want or even regular fettuccine or linguine if you don’t care about carbs. There are so many keto pasta like palmini noodles, konjac noodles, etc. All of these would work in this recipe.
Chicken
I just pan fried a small chicken breast for this recipe. I seasoned it with garlic powder, onion powder, paprika, salt and black pepper. However this recipe is intended to use pre-cooked chicken. You can use thighs or breast or any kind of leftover cooked chicken. Rotisserie chicken would be perfect as well.
Other ingredients you can try in this dish are hot pepper flakes for a little heat or even a dash of cayenne pepper. If you like creamy lemon sauces you can add a bit of lemon zest for additional flavor.
Other vegetables that would work well with this dish are mushrooms, broccoli, zucchini, asparagus, spinach, sun-dried tomatoes, fresh basil, etc.
How to make this keto chicken Alfredo sauce with zucchini noodles.
For this recipe you can pan fry a chicken breast, use leftovers or even rotisserie chicken. Just slice or cut into bite sized pieces and add at the end.
Step 1: Get out a large saute pan and heat to medium heat. Add the butter and crushed garlic. Saute for 1 minute until the butter is melted and it’s fragrant.
Step 2: Add in the cream cheese and cream. Cook and stir to incorporate the cream cheese to make a sauce. When it has all melted add the grated parmesan and season with salt and black pepper.
Step 3: Keep stirring until it’s all combined and your sauce is made. Then add in your zucchini noodles and cook for couple of minutes to soften the zoodles.
Step 4: Lastly add in sliced cooked chicken into the dish and mix to combine and heat up the chicken. That is all there is to it. You could also just add the chicken on top of the plated Alfredo noodles if you want.
And that is all there is to it. You can garnish with fresh parsley or basil leaves and serve with hot pepper flakes and extra cheese.Add a simple green salad for a complete meal.

No problem, it’s difficult to write 20 tablespoons in the old recipe card. Once I convert it to my new one it will be more specific. Take care, Denise
