Sometimes I have too much bacon on hand. I know what a dilemma! That was the case the other day. I was trying to use up some excess bacon and was in the mood for pasta. So I decided to try my hand at this low carb zucchini noodles carbonara. I had never made carbonara before but I can tell you for certain that I’ll be making this again. It’s so easy and so rich and tasty but zucchini noodles some how make it legit with only 6.8g net carbs per serving!
Zucchini Noodle Recipes
This type of dish is one the best types of sauces to make with zucchini noodles in my opinion. I have a sun creamy dried tomato & basil zucchini noodle recipe that is super delicious but the sun dried tomatoes add just that much more carbs. This dish is a bit lower and it has bacon! I also have a nice light lemon Parmesan zucchini noodle dish that is light and lovely. Below you can see I used my spiralizer to make a nice thick noodle that was slightly curly. These types of noodles really hold on to the creamy sauce.
I also used fresh cheese and grated it with my zester. It helps make the cheese melt into the sauce quicker and easier. From start to finish this pasta dish should only take 15 – 20 minutes.
Low Carb Carbonara Recipe In A Nutshell
- Cut your zucchini into noodles using a spiralizer or vegetable peeler.
- In a large skillet, brown the bacon pieces and then set aside.
- Add the garlic to the pan and saute for a minute and then add the cream cheese, cream and butter, whisking to combine.
- Add in the cheese and mix until melted.
- Place in the zucchini noodles, mix and then cover and cook for a few minutes until desired doneness.
- Take off lid, stir in bacon bits and serve.
So you can see this is a very simple but tasty dish that you can whip up in minutes. I made a big batch and ate this for 2 days it was so good. I hope you like this as much as I do and the nutritional information for 1 serving is:

Low Carb Zucchini Noodles Carbonara

Ingredients
- 3 zucchinis, medium
- 2 pieces thick bacon, cut into pieces
- ¾ cup fresh Parmesan, grated
- 1 teaspoon crushed garlic
- 2 tablespoons butter
- 2 tablespoons cream cheese
- ¾ cup heavy cream
Instructions

Using a spiralizer or vegetable peeler, make your zucchinis into noodles.

In a large saute pan, fry bacon pieces until nice and crisp and then take out and set aside.

Add garlic to bacon grease and saute for 1 minutes. Then add in the butter, cream cheese and cream. Whisk until smooth.

Add the Parmesan cheese and mix until melt and sauce begins to simmer.

Place zucchini noodles into the sauce, cover and let cook for 3-5 minutes over medium heat until desired doneness. (I like my al dente).

Take off stove and mix in crispy bacon pieces.

Needed something to go with leftover ham. Made a half recipe. Used bacon grease but no bacon to start and added frozen peas at the end, and laid the cooked ham on top. AWESOME.
