These easy creamy sun dried tomato & basil zucchini noodles only take 15 minutes to make. The zoodles have a creamy garlic, basil and sun dried tomatoes sauce that is decadent and delicious.

I love zucchini noodles and I eat them all the time. To be honest, I make my family pasta and I eat the zoodles (zucchini noodles ) as I haven’t won them over yet. Anyway, I was in the mood for a good creamy sauce for my zucchini noodles when I remembered that many low carb recipes use cream cheese to make sauces and though I’d give it a try. I had some fresh basil and sun dried tomatoes that I had frozen and I whipped up these creamy sun dried tomato & basil zucchini noodles and in just 15 minutes!

How To Make Zucchini Noodles

This is a quick post today. If you are familiar with zucchini noodles just make them how you always do. I have a spiralizer and hand peeler that makes veggie noodles. A spiralizer makes veggie noodles very easy but you can always use a regular potato peeler and just make wider noodles. But if you have a spiralizer, you want to make a thicker spaghetti sized noodle.

Tomato & Basil Zucchini Noodles Recipe

  1. Make your zucchini noodles and microwave them for 2 minutes.
  2. In the meantime, add your olive oil and garlic to a saute pan and cook for a minute.
  3. Next add your cream cheese, sun dried tomatoes, spices and cream and stir until everything is melted and blended well.
  4. Finally add your zoodles and cook for a minute longer and you are done.

Ingredients

  • 2 zucchinis made into noodles
  • 1 Tablespoon olive oil
  • 2 cloves garlic, crushed
  • ÂĽ cup sun dried tomatoes
  • 2 Tablespoons fresh basil, finely chopped
  • 4 oz cream cheese
  • ÂĽ teaspoon salt
  • 2 Tablespoon cream
  • ÂĽ teaspoon pepper
  • ÂĽ teaspoon oregano

Instructions

  1. Using a spiralizer or peeler, make your zucchinis into noodles.
  2. Place in a microwave dish and cook for 2 minutes.
  3. In the meantime, add your olive oil and garlic to a sauce pan and cook for a minute or two.
  4. Then add your cream cheese and cream and stir well until the cream cheese has melted and mixed in well with the cream.
  5. Add your sun dried tomatoes and spices and mix well.
  6. Then add your zucchini noodles and cook for 1 minute longer.
  7. Take off the stove and mix in your fresh basil.
  8. Serve and enjoy!

    We have to zoodle makers — one we keep at home and then a small one we travel with. Yep!! We love zoodles that much and we do eat pasta too. Zoodles are good on those “off” days when we want a lighter meal. I am definitely trying your sauce.

    I can’t believe this only takes 15 minutes! We’ve been on the fence about buying a spiralizer, but I think this recipe alone warrants one. It looks soooo delicious!
