I recently learned about cabbage chips and thought they’d be a great alternative for kale chips which I don’t really care for. I was so psyched at about how good the were!
Do these air fryer cabbage chips taste just like potato chips? No but they are darn close and so easy to make. The leaves get really crispy – especially the thinner parts and with a little seasoning they are the best substitute for potato chips I’ve found so far.
Additionally these crispy chips are very low in calories. So if you are looking for a healthy, low carb, low calorie salty snack, give this recipe a try! My batch of 2 leaves made a nice bunch of chips and had only 18 calories and 2.6g net carbs for all of them.
The health benefits of cabbage.
Cabbage is a tasty low calorie and low carb vegetable. It’s rich in nutrients such as vitamin C, vitamin K and potassium which may help with blood pressure.
It also contains insoluble fiber which helps with digestive issues and soluble fiber which is said to help with cholesterol. Learn more about the health benefits of cabbage here.
Recipe ingredients I used.
The simple ingredients I used for this recipe are just whole raw cabbage leaves, salt, paprika, garlic powder and onion powder. I used nonstick cooking spray as my oil source but you can use olive oil if you prefer.
Honestly these are just as good if you season with salt and black pepper but I added a few more spices to amp up the flavor a bit. You can try nutritional yeast for a cheesy flavor.
And as for cabbage I used regular green cabbage leaves that you can see below. I cut out the rib in the middle. The thinnest part of the leaf gets the crispiest so use as many of the outer leaves as you can.
How to make cabbage chips in the air fryer.
Step 1: Get out a small bowl and pour the seasonings into it. Mix well and set aside.
Step 2: Pull a couple of leaves from a head cabbage. The thinner the leaf the crispier the chips will get. Cut into large pieces. I tried to keep them a uniform thickness and did not use the thick middle step part.
Step 3: Spray the air fryer trays with nonstick cooking spray. Place the raw cabbage pieces in a single layer on the wire rack and spray cabbage with cooking spray. Flip and spray the other side. Sprinkle the seasonings all over the cabbage pieces.
Alternatively you can add the leaves to a large bowl and massage a tablespoon or two of olive oil into the leaves and then place them on the trays and sprinkle the seasonings over them. I was taking the easy way out with the cooking spray.
Step 4: Place the trays in the air fryer and set the temperature to 250°F and cook for about 20 minutes. Cooking time may vary depending on the size of the leaves so check them towards the end.
You want them to be golden brown with crispy edges. Make sure not to burn them. If they are not down after 20 minutes put them back into bake for a few minutes until you get them to your liking.
Step 5: Let them cool a bit and they will get a little bit more crispy. You cannot really store these chips and maintain crispiness. I would suggest eat them right away.
If you have extras you could place them in an airtight container or ziplock bag and try to re-crisp them in the air fryer for a few minutes. I haven’t tried this yet but it might work.

To make these veggie chips in the oven.
Preheat oven to 250°F and spray a rimmed baking sheet with nonstick cooking spray or cover sheet with parchment paper. Place the pieces of cabbage on the baking tray and spray both sides with cooking spray.
Then sprinkle the spices over top and place in the oven. Bake for 45-60 minutes in the preheated oven until golden brown and crispy. Cooking times may vary so check on them every once in awhile.
Recipe tips and notes.
- You might have to do this in batches if you are trying to make a whole head of cabbage. You want them to be in a single layer so there might not be much room to cook a lot of cabbage chips.
- The leaves will blow around when they cook because they are so light and from the convection air.
- They are just as good with simply using salt and black pepper and they would have a few less carbs. However you can use any of your favorite herbs and spices.
- These chips will not be crispy after awhile so it is suggested that you eat them right away.

AIr Fryer Cabbage Chips Recipe
These low carb and low calorie airfryer cabbage chips will be you new favorite healthy snack. IF you are a fan of kale chips I bet you will like these even more. And they are so easy in the air fryer.
Ingredients
- 2 large green cabbage leaves
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- nonstick cooking spray
Instructions
- Spray the trays of the air fryer with nonstick cooking spray and set aside. Add the spices to a small bowl and mix well.

- Set the air fryer temperature to 250°F and cook for 20 minutes. Check towards the end to make sure they are not burning. They should turn golden brown and be crispy to the touch.
- Let cool but eat immediately as they will lose their crunch as they sit out overnight.
Notes
