When I think of summer I think of coleslaw. Today I was in the mood for coleslaw and was trying not to use any dairy or sugar. So I came up this creamy cilantro lime coleslaw. It is a winner I tell you. My husband even asked me to make it again next week. It’s creamy and crunchy and has that fabulous lime and cilantro combination. It’s very look in carbs too, coming in at just 3.2g net carbs per serving.
Versatility Of Coleslaw!
I love coleslaw because there are so many ways you can prepare it. On this blog I have a southwest flavored coleslaw, a radish & cabbage curried coleslaw and an antipasto coleslaw. All are delicious but I think this is our new favorite.

Creamy Cilantro Lime Coleslaw Recipe
Today I just used a preshredded coleslaw I bought from Aldi. I was in a bit of a hurry and to be truthful I wasn’t sure this would work out or not. Then I basically made a quick, thick and creamy avocado dressing with cilantro and lime and of course garlic. It’s like guacamole and coleslaw had a baby. Just whiz the avocado dressing in a blender or food processor and mix with the slaw. Make sure to refrigerate for a few hours so that the cabbage softens.
This recipe holds up very well the next day and my hubby ended up taking some in his lunch. One note about the dressing, it’s very thick. If you want it thinner, add a bit more lime juice or water and taste as you go.
So with the preshredded slaw mix and the quick dressing this dish takes about 5 minutes. Yes just 5 minutes! However it is unbelievably tasty and would be just perfect for a barbecue or picnic summer. Or just make it the next time you have burgers or tacos. The nutritional information for 1 serving is:

Ingredients
- 14 oz coleslaw, bagged
- 1 1/2 avocados
- 1/4 cup cilantro leaves
- 2 limes, juiced
- 1 garlic clove
- 1/4 cup water
- 1/2 teaspoon salt
- cilantro to garnish
Instructions

In a food processor add the garlic and cilantro and process until chopped.

Add the lime juice, avocados and water. Pulse until nice and creamy.

Take out the avocado mixture and in a large bowl mix it with the coleslaw. It will be a bit thick but it will cover the slaw nicely.

For best results, refrigerate for a few hours before eating to soften the cabbage.

Really excited to make this. It was a little too sour for my Hubby. I added salt and pepper to my serving and found it enjoyable. I think next time I will lessen the lime and add salt and pepper. Thanks for the recipe it was exactly what i was looking for as a side dish with our burgers with no bun.

Tried this one today. It’s a little too tart for my particular taste. I guess I’m used to sweeter slaw. Tried adding a couple of tablespoons of xylitol. Letting the flavors blend while refrigerating. Hopeful😃
