Lately I’ve been remaking alot of my old recipes and I forgot how good they were. For instance I made my spicy Mexican corn recipe and just loved it so I today I use many of the seasonings to make this Mexican marinated chicken recipe.
This Mexican chicken marinade is easy and low carb but the thing I like the most is how much you can do with the finished chicken. You can use it in salads, tacos, burritos, rice, quesadillas, nachos, wraps, sandwiches and more. It’s only 2.7g net carbs per ½lb chicken breast so this will be a regular in our weekly dinner rotation.
What’s In This Mexican Marinade?
As I mentioned above, I used a lot of the ingredients from my spicy corn recipe. It’s basically a cilantro lime marinade with lots of spice!
The base is olive oil and lime juice and the seasonings are lime zest, garlic, chili powder, cumin, paprika, salt, pepper and lots of cilantro.
A note about the lime juice. You of course can use fresh limes but I use Realime juice because it has less carbs. If you don’t care about carbs use the fresh juice. But the zest is important so don’t skip that.
By the way 1 lime makes about 2 tablespoons of lime juice. So for this recipe you will need two limes. (source)
Let’s Make The Mexican Marinated Chicken!
To make this easy chicken marinade all you have to do is mix together all of the ingredients in a bowl. Place the chicken breasts (boneless, skinless) in a baggie and pour the marinade over the them. Squish the chicken around in the baggie to get the marinade over all the chicken. Put the baggie in the refrigerator for at least 6 hours or even over night.
Take the chicken out of the baggie and let it sit for about 15 minutes before grilling. Place them on the grill for about 5 minutes on each side. Times may vary depending on the size of the chicken pieces.
When done let it set for about 5-10 minutes to seal in the juices.
Ways To Use This Grilled Chicken
- Eat the grilled chicken as is for a low carb main dish.
- It would be great for chicken fajitas! Or fajita soup.
- Slice it and lay atop a nice green salad. Try this low carb margarita dressing or homemade ranch. Here is a lot of low carb salad dressings to try.
- Chop it up and make a healthy keto burrito bowl.
- Use it in one of these low carb meal prep salad jars.
- If you are not low carb, chop and use this Mexican chicken in burritos, tacos, nachos or quesadillas.Â

Low Carb Mexican Marinated Chicken Recipe
This Mexican marinated chicken recipe is great for grilling chicken for dinner, salads, tacos and more. It's a simple low carb marinade that is full of flavor that you can make in minutes. Each huge piece of chicken has only 2.7g net carbs!
Ingredients
- 1 ½ lbs chicken breast, skinless, boneless
- 2 tablespoons olive oil
- ¼ cup lime juice (approximately 2 limes but I use Realime for less carbs)
- zest of 2 limes
- ½ teaspoon chili powder
- ½ teaspoon cumin powder
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ¼ teaspoon paprika
- ¼ cup fresh cilantro, chopped
- 2 cloves garlic, crushed
Instructions
- Mix all the marinade ingredients together in a bowl.
- Add the chicken breasts to a large baggie and pour the marinade over it. Squish the chicken around in the bag to get the marinade to cover everything. Set in the refrigerator for 6 hours or over night.
- When ready to cook, grill about 5 minutes on each side.

Your Mexican marinade has such simple ingredients (all of which I have in my pantry right now) but packs such a huge flavour punch.
