I only go to Trader Joe’s about once a month at most. So when I am there I tend to buy anything that looks interesting to me. Today I found a bag of broccoli slaw and when I turned it over the bag I saw that there wasn’t many carbs in it so I bought and tried to think what I would make with it. I remembered a creamy ginger dressing I had somewhere and thought it would be perfect for this low carb broccoli slaw!
Low Carb Broccoli Slaw Ingredients
Below you can see the bag for the broccoli slaw. I imagine you can find this in a bigger grocery store. I would never make this on my own. It says that it contains organic broccoli stems and carrots. If you can’t find the broccoli slaw, you use cabbage or just chop up some broccoli florets. It’s the dressing that really brings it alive. The carrots just add a bit of color so if you don’t have the bagged leave them out.
Creamy Ginger Dressing Recipe
This was pretty yummy to me. It’s bright and flavorful and super easy to make. You just add some fresh ginger root (or minced ginger like this), a clove of garlic, lemon juice, lemon zest, mayo and olive oil all to a food processor. Now you can blend all the ingredients until well blended.
Now you dress the slaw and refrigerate for an hour or so to soften the broccoli. Or you can eat right away but it might be very crunchy.
This is a bright and satisfying low carb salad. It’s something about the crunchiness combined with the bright and creamy dressing that really makes this a good winter salad. I hope you like it as much as I did. The nutritional information for 1 serving is:

This low carb broccoli slaw is dressing a delicious creamy ginger dressing with lemon and garlic. It's a fresh and easy low carb salad that you can put together in 5 minutes and only has 4.3g net carbs!
- 5 cups broccoli slaw (12oz bag)
- 1/2 cup mayonnaise
- 1 clove garlic, crushed
- 2 teaspoons fresh ginger, minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- zest of 1/4 lemon
In a food processor add the garlic, ginger, mayo, oil, lemon juice and lemon zest. Process to make your creamy ginger dressing. I use this brand of minced ginger.
In a large bowl mix the slaw and the dressing. Mix well and refrigerate for 1 house to let the slaw soften.
