Lemon and garlic are one of my favorite flavor combinations so the other day I thought I’d make a big crock of this slow cooker Greek chicken. I just loved it and because it made so much I had both leftovers for meal planning and made some delicious lemon chicken salad!
Slow cooker meals are some of my favorites because they take minimal prep time to put together and you have delicious weeknight dinner. And this recipe has the added benefit of using simple ingredients that you probably have on hand.
This Greek chicken recipe is also naturally low carb which works for those on a low carb diet. And if you are trying to up your protein it’s great for that too. I ate it over low carb cauliflower rice pilaf and my hubby ate it with regular white rice.
Recipe ingredients I used and substitutions.
The simple ingredients I used in this keto recipe is boneless chicken breasts, fresh cloves of garlic, fresh lemon juice, extra virgin olive oil, paprika, oregano, salt and black pepper.
Chicken
I used boneless skinless chicken breast for this recipe. However you could also use chicken thighs and even bone in pieces. I would recommend not using skin on as it might add a lot of grease to the dish.
Fresh Lemons
I use a few fresh lemons for this dish for the juice, zest and I added slices at the end to maximize the lemon flavor. You can use bottled lemon juice but I think the zest adds a really nice flavor so if you do, at least try to use 1 fresh lemon.
Garlic and Spices
The spices are basic ones you probably have in your cupboard but I highly recommend using fresh garlic and not garlic powder nor the kind that is chopped and in jars. In a pinch you can use the jarred kind but the fresh makes it especially flavorful.
While this is a simple recipe you could add ingredients like bell peppers, sun-dried tomatoes, kalamata olives, artichoke hearts, etc. I was trying to keep the carb count to a minimum but these are all low in carbs and would well with the Greek flavors. And if you want a little heat you can always add a little hot pepper flakes.
How to make slow cooker Greek chicken.
Step 1: Get out a small bowl and mix the lemon juice, lemon zest, olive oil, crushed garlic cloves and seasoning (oregano, paprika, salt and black pepper) to make the sauce and set aside.
Note these are also great marinade ingredients. You can mix this together to marinate meat and grill in the summer!
Step 2: Add the pieces of meat into the crock and pour the lemon sauce over top.
Step 3: Slice the fresh lemons and place the slices over top the sauce. Put the lid on the crock pot and cook for 4-6 hours on high or 6-8 hours on low until tender and cooked through.
Cooking time may vary so check on your chicken at some point to see if it’s cooked through. The internal temperature should be 165°F when using a meat thermometer.
Step 4: When done, spoon everything into a large serving bowl and enjoy. You can garnish with fresh herbs like parsley if you want. Store leftovers in an airtight container. Please scroll down to view the printable recipe card.
Note you can also shred this chicken if you want. If you do so, place back in the crock and let it soak up the sauce.
