I love anything that comes in a brownie flavor so today I thought I’d use cottage cheese and make this low carb edible brownie batter. It’s very decadent even though it’s made from simple healthy ingredients. And it’s the perfect snack to satisfy your sweet tooth.
I’m sure you have noticed the cottage cheese craze that is going on and having made many cottage cheese recipes I have too. It’s an a great food to add thickness, creaminess and it has a lot of protein too. So it’s a good tool to have in your healthy cooking tool belt.
So just whipping some up and add a few ingredients you can create this brownie flavored cottage cheese that is tasty and good for you. This indulgent treat is low carb, sugar free and full of protein, so it’s a great chocolatey snack when you are on a keto diet.
Recipe ingredients I used and substitutions.
This six simple ingredients I used were chocolate protein powder, cottage cheese, cocoa powder, sweetener, vanilla extract and sugar free chocolate chips. If you want you can add a pint of salt to enhance the sweet flavor but I felt it was sweet enough as is.
Cottage Cheese
This is the main ingredient and I like to use Good Culture brand because it’s low carb, tastes great and also has probiotics. I used this as the main thickener instead of raw flour which is traditionally used. Some people use almond flour or coconut flour (which you are free to use too) but I felt this was thick enough and had the texture of edible batter.
That being said you can use any brand you want and it can be low fat cottage cheese or full fat, small curd or large curd.
Divine Cocoa Powder
I love this brand for the rich color, taste and it has zero net carbs. Again you can use any brand you want but it might be worth the investment if you like making keto treats. I can find it at our bigger grocery store but you can also find Divine cocoa powder online
Isopure ZeroCarb Chocolate Protein Powder
I love the Isopure protein powders because they taste good and have zero net carbs. I think Target even sells them now but I usually buy mine on Amazon. As with the other ingredients you can use your favorite brand and you could even use vanilla flavored if you wanted but you might want to put a bit more cocoa powder in if you do.
Sweetener and Vanilla Extract
I like Swerve sweetener and use it most of the time. Either the erythritol or allulose blend. However you can use whatever your favorite sweetener is and if you don’t care about carbs you can use regular granulated sugar. I used vanilla extract but if you have chocolate extract that would be good too.
Lily’s Baking Chips
I love Lily’s chocolate chips and specifically their milk chocolate baking chips seen below. They taste great and are low in carbs. This is my preferred brand of keto friendly chocolate chips but there are so many available that you can use whatever type of chocolate chips you want. Even a good dark chocolate bar chopped up into chunks would work.
How to make low carb edible brownie batter.
Step 1: Spoon the cottage cheese into a food processor or high speed blender. Process until smooth and creamy. You want to get out as many lumps as possible.
Step 2: Add in the cocoa powder, sweetener, vanilla extract and protein powder to the cottage cheese mixture and process until nice and creamy. Make sure all the ingredients are incorporated well.
Step 3: Spoon into a medium mixing bowl and fold in the keto chocolate chips. Then you can dish this into 2 smaller bowls and serve. It’s really rich and thick and you might not want eat the whole thing in one sitting. I personally got a few servings out this batch because it’s decadent.
If this keto brownie batter is too thick for your taste, you can add a bit of almond milk to thin it out but the purpose is for it to be edible batter so it should be pretty thick.

This keto edible brownie batter is made with whipped cottage cheese so it's high protein as well sugar free. Full of rich chocolate flavor as well as thick and delicious. It's a decadent sweet treat you can whip up in minutes.
Ingredients
- 1 cup cottage cheese (I like Good Culture brand)
- 2 tablespoons cocoa powder (I like Divine brand)
- 1 teaspoon vanilla extract
- 1 scoop protein powder of choice
- ¼ cup sweetener
- 2 tablespoons keto chocolate chips (I like Lily's milk chocolate)
Instructions
- Spoon cottage cheese into a food processor or high speed blender and process until smooth and creamy.
- Next add in the cocoa powder, protein powder, vanillla extract and sweetener. Process until well combined and then spoon into a medium mixing bowl.
- Fold in the keto chocolate chips and refrigerate until ready to eat. This made 2 servings for me because it's so rich and chocolatey. Store leftovers in an airtight container.
