With summer just about here my mind is thinking about cold treats. I’m sure I will be making a few keto ice cream recipes but until then I’m going to start with some keto pops. Today I’ve made a low carb chocolate pudding protein pop. It was very easy and got a thumbs up from everyone in my family. My husband declared it the perfect fudgscicle copycat.
I like this recipe because it’s easy, it’s low carb and because it’s high in protein. This is nice for me when I want an fternoon snack or even for a nighttime snack. However you want to eat these I’m sure you will love them. Each protein pop has 92 calories, 3.3g net carbs and 4.3g protein.
Low Carb Chocolate Pudding Protein Pop
Recipe In A Nutshell
- Add almond milk, heavy cream, pudding mix, cocoa, protein powder and sugar free syrup in a large mixing bowl.
- Whip the ingredients together for a few minutes until well combined and starting to thicken from the pudding.
- Spoon into popsicle molds and add your sticks.
- Freeze for a couple hours until they have harden.

Chocolate Pudding Pop Ingredients
Below you can see 4 of the 6 ingredients you need for this recipe. To make these keto pudding pops I used sugar free chocolate pudding mix, chocolate protein powder, Divine cocoa powder, almond milk, heavy cream and Torani sugar free syrup.
I picked these specific products to have the lowest carbs possible. The Divine cocoa powder is very low in carbs as is the Quest chocolate milkshake protein powder. However you can use regular cocoa powder and whatever you favorite protein powder is. I would just make sure it’s chocolate or vanilla flavored. Also if it is not flavored you will want to add more sweetener.
Lastly I used quite a bit of Torani sugar free syrup. If you don’t have any of this you can use regular Swerve confectioners sweetener or your sweetener of choice. I used ¼ cup of syrup but you can use 2 – 4 tablespoons of sweetener to substitute.
Let’s Make These Low Carb Pudding Protein Pops!
This is really simple. Get out your mixer and a big mixing bowl. Pour all the ingredients into the mixing bowl and start whipping up. Once it starts thickening up you can spoon the mixture into your popsicle molds.
Below I tried to show you what it looks like when you are whipping it up. It looks like a very thick milkshake.
How Long To Freeze The Pops
Once you spoon the mixture into the popsicle molds, you can add the popsicle sticks right away because the mixture is so thick. Then place them in the freezer and it may take up to 2 hours to harden. This all depends on the size of your popsicle molds. Below you can see my molds and they took 2 hours.

- I used sugar free chocolate pudding but if you want to change the flavor, by all means use a different pudding flavor and protein powder.
- Make sure you whip the mixture for a few minutes. You want the cream to get airy to make the popsicle softer to eat.
- I used Torani sugar free syrup but if you don’t have any you can substitute with sweetener of choice. I used ¼ cup of syrup so if you Swerve sweetener for instance start with 2-4 tablespoons of sweetener.
- When you taste the “batter” you want it to be very sweet. When the mixture freezes it will lessen the flavor a bit so sweeter is better.
- This recipe makes 14 popsicles. If you want less you can easily cut this recipe is half. It’s a bit hard to calculate half of the pudding mixture though.
My Favorite Popsicle Molds
I have A LOT of popsicle molds and whichever one I use depends on my mood. Below I have these cool silicone push up possible molds. They really come in hand if you like frozen treats. So these are my favorite popsicle molds and why:
- silicone push up molds: These are pictured below. This is great for any kind of popsicle you might want to make. They are easy to clean and reuse over and over again. I especially like them for thicker popsicles using smoothies or recipes like this popsicle.
- Zipsicle ice pop pouches: These are great if you want to make a bunch of freezicles using sugar free drinks, juices, pops or even alcohol pops. They are convenient and easy to use. I only use thin liquids in these though like sugar free lemonade or tea pops, etc.
- Norpro ice pop maker: This mold is nice if you want to make a large batch of popsicles and the cover is convenient for keep the popsicle sticks in place.
- Small pop molds: I like these kinds of popsicle molds because they are smaller the the Norpro pop maker. That way your pops will have less carbs per pop. Something to think about.
- Other molds: I often by molds at the dollar store if they are cute. Also Amazon has so many cute and fun popsicle makers. I just bought my nephew a few dinosaur pops that I think he will love.
How To Store These Keto Pudding Pops
You can always keep your popsicles in the molds but since this recipe makes 14 pops you might want to store them. I simply use those old time sandwich bags without the ziplock and then put all of these in a large ziplock or freezer container. Below you can see what they look like.

- 2 scoops Quest Chocolate protein powder
- 1 (1 oz) box sugar free chocolate pudding
- 1 tablespoon Divine cocoa powder
Instructions
- Get out your mixture and add all the ingredients to a large mixing bowl.
- Start whipping up the ingredients until the mixture is well combined and starting to thicken. It should look like a very thick milkshake.
