This is another easy vegetable side dish recipe you can make on a busy weeknight dinner. These parmesan green beans and potatoes are full of flavor and very easy to make. The roasted potatoes are crispy but creamy on the inside and green beans are flavored with parmesan, garlic and spices. You can make this easy side dish in both the oven and air fryer too.

The air fryer is slowly becoming my favorite kitchen appliance second only to my Vitamix blender. Point in case, air frying creates crispy potatoes like these diced potatoes. So today I made a easy and quick side dish in under 20 minutes in the air fryer and I also made them in the oven so if you don’t have one you can do it that way with great results.
Thisย green beans and potatoes recipeย was really tasty and cooked perfectly made either way. The parmesan, garlic and seasonings added tons of flavor to both veggies and this delicious side dish complements just about any meaty main dish.
Another thing I like about this delicious side dish is that it’s a two-fer. You get a starch and green vegetable all in one. Just add grilled chicken, burgers or steak and dinner is done in no time.
Recipe ingredients and substitutions.
The simple ingredients I used in this recipe were baby potatoes, fresh green beans, fresh garlic cloves, rosemary, olive oil, parmesan cheese, salt and black pepper. If you want to add some bacon flavor you can use bacon grease instead of the olive oil.
Baby Golden Potatoes
I really like to use baby yellow potatoes. If you can’t find any try to use regular size ones and cut them in uniform chunks. That way you can keep the skins on no peeling necessary. You can use other types or even sweet potatoes if you want.
Fresh Green Beans
While I used French cut green beans from Aldi in this recipe you can substitute with broccoli, asparagus, Brussels sprouts, etc. Or you can just skip the green veggie altogether. Note that the cooking times are for these 2 veggies specifically.
Parmesan Cheese and Spices
I love the delicious flavor combination of rosemary and parmesan cheese with potatoes but you could use Italian seasoning or even fresh herbs. Remember 1 teaspoon of dried herbs equals 3 teaspoons of fresh herbs. And for a little heat add some hot pepper flakes.ย
The grated parmesan cheese also adds lots of flavoring but you can substitute with grated romano or asiago if you have those. And if you are dairy free you can substitute with nutritional yeast.
Fresh Garlic Cloves
And lastly I used fresh garlic which I think is important to use instead of garlic powder but you can easily use it. The ration is 1 cloves of garlic is equal for ยผ teaspoon of garlic powder. If you do not like garlic you can eliminate it but to me it’s so good.
How to make green beans and potatoes in the oven.
- Preheat oven to 400ยฐF. Spray a baking sheet with nonstick cooking spray and set aside.
- Get out a small bowl and add the salt, black pepper, dried rosemary, crushed garlic and olive oil. Mix together and set aside.
- In a large mixing bowl, add the baby potato pieces. If using the baby gold potatoes, cut them in half or thirds. Pour ยฝ of the olive oil mixture over the potato cubes and 1 tablespoon of parmesan cheese and mix well. Spoon onto prepared baking sheet and place in the preheated oven. Bake for 20 minutes.
- Meanwhile add the green beans to the same mixing bowl and add the rest of the oil mixture and 1 tablespoon of parmesan cheese. Mix well and set aside.
- When the potatoes are done, add the green bean mixture to the pan and mix everything on the cooking sheet. Place back in the oven and cook for 12-15 minutes until the green beans are cooked through and the potatoes are golden brown. Note cooking time may vary depending on the size of potatoes.
- Let cool then serve.
How to make parmesan green beans and potatoes in the air fryer.
Note I have an 8 quart size of air fryer so these amounts easy fit in my basket. If you are using a smaller type of air fryer you make have to make this recipe in batches or just half the amount.
- Spray the air fryer basket with cooking spray and set aside. Get out a small bowl and add the salt, black pepper, dried rosemary, crushed garlic and olive oil. Mix together and set aside.
- In a large mixing bowl, add the potato chunks. If using the baby gold potatoes, cut them in half or thirds. If using regular sized potatoes cut them into uniform pieces. Pour ยฝ of the oil mixture and 1 tablespoon of parmesan cheese and mix so the potatoes are covered evenly.
- Add the potato mixture to the prepared air fryer basket in a single layer and bake at 400ยฐF for 12 minutes.
- While they are cooking, add the green beans to the same bowl. Add the rest of the oil mixture and 1 tablespoon of parmesan cheese to the bowl. Mix well and set aside.
- After the 12 minutes are up, add the green beans to the potatoes and spread out evenly. Place back in the air fryer and cook for 6-8 minutes more. Check them at 6 minutes and see if the potatoes are fork tender and golden brown.
No matter which way you make them, when done take and spoon the finished dish into a large serving bowl and let cool a few minutes. Store leftovers in an airtight container. Please scroll to view the printable recipe card.
Above you can see that they look like when done. The crispy potatoes get nice and brown the green beans wilt just a bit but not too much.
If you like the texture of the green beans more crunchy you can add them a few minutes later then suggested so they are still a little crisp when done.

Roasted Green Beans and Potatoes (oven or air fryer)
This quick and easy green beans and potatoes with garlic, parmesan and spices. The perfect side dish for any meaty main dish.
Ingredients
- 2 cups baby potatoes, halved
- 2 cups green beans, cut in half or thirds
- 2 tablespoons olive oil
- ยฝ teaspoon salt
- ยฝ teaspoon black pepper
- 1 teaspoon dried rosemary
- 2 tablespoons grated parmesan cheese
- 2 cloves garlic, crushed
Instructions
