The air fryer is slowly becoming my favorite kitchen appliance second only to my Vitamix blender. Point in case, air frying potatoes cooks them perfectly like these dice potatoes. So today I made a quick and easy vegetable side dish in under 20 minutes in the air fryer.
This airy fryer parmesan potatoes and green beans recipe was really tasty and cooked perfectly. The parmesan, garlic and seasonings added tons of flavor to both potatoes and green beans and this dish compliments just about any meaty main dish.
Another thing I like about this delicious side dish is that it’s a two-fer. You get a starch and green vegetable all in one. Just add grilled chicken, burgers or steak and dinner is done in no time.
Recipe ingredients I used.
The simple ingredients I used in this recipe were baby potatoes, green beans, fresh garlic, rosemary, olive oil, parmesan cheese, salt and black pepper.
About the potatoes, I really like to use baby potatoes. If you can’t find any try to use golden or red potatoes and cut them in big chunks. That way you can keep the skins on and they seem to work great in the air fryer. Russet potatoes would work but I find the golden types of potatoes much better in recipes like this.
While I used green beans in this recipe you substitute with broccoli, asparagus, Brussels sprouts, etc. Or you can just make the parmesan potatoes without anything else. Only note that some vegetable will take longer to cook than the beans such as the Brussel sprouts.
I love the flavor combination of rosemary and parmesan cheese with potatoes but you could use Italian seasoning or even fresh herbs. Remember 1 teaspoon of dried herbs equals 3 teaspoons of fresh herbs. And for a little heat add some hot pepper flakes.
How to make air fryer parmesan potatoes and green beans.
Note I have an 8 quart size of air fryer so these amounts easy fit in my basket. If you are using a smaller type of air fryer you make have to make this in batches or just half the amount.
Step 1: Spray the air fryer basket with cooking spray and set aside. Get out a small bowl and add the salt, black pepper, dried rosemary and grated parmesan cheese and set aside.
Step 2: In a large mixing bowl, add the baby potato halves. If using the baby gold potatoes, cut them in half or thirds. Pour 1 tablespoon of olive oil over them and sprinkle half of the seasonings. Then add 1 clove of crushed fresh garlic and mix everything together.
Step 3: Add the potato mixture to the air fryer basket in a single layer and bake at 400°F for 12 minutes.
Step 4: When they are cooking, add the green beans to the same bowl. Add the other tablespoon of olive oil, the other half of the spice mixture and the last crushed clove of garlic. Mix well and set aside.
Step 5: After the 12 minutes, add the green beans to the potatoes and spread out evenly. Place back in the air fryer and cook for 6-8 minutes more. Check them at 6 minutes and see if the potatoes are fork tender and golden brown.
If not cook for a couple of minutes more. Cooking times may vary.
Step 6: When done, take and spoon into a large serving bowl and let cool a few minutes. Store leftovers in an airtight container. Please scroll to view the printable recipe card.
Above you can see that they look like when done. The crispy potatoes get nice and brown the green beans wilt just a bit but not too much.
If you like your green beans more crunchy you can add them a few minutes later then suggested so they are still a little crisp when done.
And there you have a simple air fryer side dish that everyone will love. I personally could eat this as is for a lunch or even a vegetarian dinner. However it best as a side dish.

Air Fryer Parmesan Potatoes & Green Beans Recipe
This quick and easy air fryer parmesan potatoes recipe and green beans is the perfect side dish for any meaty main dish.
Ingredients
- 2 cups baby potatoes, halved
- 2 cups green beans, cut in half or thirds
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried rosemary
- 2 tablespoons grated parmesan cheese
- 2 cloves garlic, crushed
Instructions
- Spray the air fryer basket with nonstick cooking spray and set aside. Get out a small bowl and mix together the salt, black pepper, rosemary and grated parmesan cheese.
- In a large bowl add the potatoe pieces. Pour in 1 tablespoon of olive and half the spice mixture. Then add 1 clove of crushed garlic. Mix well and spread out evenly in the prepared air fryer basket.
- Cook at 400°F for 12 minutes.
- In the meantime add the cut green beans in the same bowl you used for the potatoes. Pour the remain olive oil, seasonings and the other crushed garlic clove in the bowl and mix well.
- After the 12 minutes add the green beans and spread out to cover the potatoes. Cook for 6-8 minutes until the potatoes are fork tender and golden brown. Check at 6 minutes and if not done add them back for a few more minutes. Cook time may vary.
- When done, let cool then serve. Store leftovers in an airtight container.
