I like to make shish kebabs in the summer. It’s an easy meal because the night before you chop up the meat and vegetables, marinate them and the next day grill for dinner. Very little clean up is needed and it’s a nice healthy dinner for my family.
However, now that I got myself an air fryer, I can make these easy, low carb Asian chicken kebabs all year round and in about 15 minutes!
Easy low carb Chicken Marinade Recipe
This is a simple marinade that I used for an Instant Pot shredded Asian beef recipe. It’s simply soy sauce, lots of garlic, ginger and Lakanto golden sweetener.

Air Fryer Chicken Kebabs Recipe
This is how I make these low carb kebabs in a nutshell:
- Cut the chicken and vegetables into chunks.
- Mix the marinade of soy sauce, Lakanto golden, garlic, ginger, salt & pepper.
- Place the chicken and vegetables in a large baggie and pour the marinade over top.
- Refrigerate over night or make it early in the morning for serving in the evening.
- When ready to eat, place the chicken and vegetables on skewers and place into Air Fryer basket.
- Cook at 380°F 12 -1 5 minutes until chicken is at 160° F.
Don’t have an air fryer?
You can just make these on the grill or in a grill pan. Times may very on the grill but roughly 15 – 20 minutes. You could also just add everything to a sprayed cookie sheet and bake at 400°F for 15 minutes, flip and then for another 10-15 minutes.
Low Carb Vegetables to use in kebabs
For these kebabs I used mushrooms, yellow and green zucchini, colorful bell peppers, red onions and grape tomatoes. When I did the nutrition for these kebab I took out the grape tomatoes as they didn’t really go with the Asian flavors and they were higher in carbs. So here are some carb counts for standard kebab veggies and you can pick what you like.
- mushrooms (1.6g net carbs per cup)
- bell peppers (5.9g net carbs per cup)
- zucchini (2.7g net carbs per cup)
- cauliflower (3.2g net carbs per cup)
- red onions (12.2g net carbs per cup)
- grape tomatoes (4.8g net carbs per cup)
- green beans (4.3g net carbs per cup)
- radishes ( 2 net carbs per cup)
- asparagus ( 2.4 net carbs per cup)
- carrots ( 7.4 net carbs per cup)
- broccoli ( 6.1 net carbs per cup)

By the way, I have a new air fryer which is a Chefman 6.3 qt digital air fryer. You can use it to dehydrate and it has a rotisserie spit! However I really like that it has a window so you can see your food as it’s cooking.

Low Carb Asian Chicken Kebabs in the Air Fryer
I loved these easy, low carb Asian chicken kebabs I made in my Air fryer. It was so easy and very delicious, not to mention low carb and healthy! Each serving has only 4.5g net carbs.
Ingredients
- 2 lbs chicken breasts, cubed
- 1/2 cup soy sauce
- 6 cloves garlic, crushed
- 1 teaspoon grated fresh ginger
- 1/2 cup Lakanto golden sweetener
- 1 red pepper, chopped
- 1/2 red onion, chopped
- 8 mushrooms
- 2 cups zucchini, chopped
Instructions

Make the marinade by mixing the soy sauce, garlic, ginger and Lakanto sweetener. Pour into a large ziplock bag or marinating container.

Chop up the chicken and vegetables into chunks and add to the baggie. Mix around to get the marinade on everything. Place into the refrigerator overnight or early in the morning for your dinner that night.

Take out the baggie and place the vegetables and chicken on wooden skewers. NOTE: Make sure your skewers fit in your air fryer basket.

Lay the kebabs in the Air Fryer basket and set the temperature to 380°F for 12-15 minutes or until the chicken reaches 160°F.

Take off the skewers to eat.

Hi Tina, I don’t know how you would use the rotisserie function for this but I can’t imagine it would be much different than the regular air frying. I’m sorry I’m not much help. Please let me know if you do it and how it came out.
