I loved these low carb air fryer chicken kebabs because they are so easy and delicious. The Asian marinade creates such flavorful chicken and it’s a great way to eat colorful vegetables. Plus it only takes about 20 minutes to make and one serving has only 4.5g net carbs.

I like to make shish kebabs in the summer. It’s an easy meal because the night before you chop up the meat and vegetables, marinate them and the next day grill for dinner. Very little clean up is needed and it’s a nice healthy dinner for my family.
However, now that I got myself an air fryer, I can make these low carb air fryer chicken kebabs all year round and in about 20 minutes! The simple marinade has an Asian flavor that goes great with the vegetable and chicken skewers.
A note about the wooden skewers.
I used small wood skewers in this recipe. You can use metal ones too if you want but they have to be short. These are the wooden skewers that I used and they are about 6 inches long.
Bamboo skewers that you can buy in most grocery stores are flammable and they can burn when you use them on the grill. All you need to do is place the skewers in water for 30 minutes before using them so they don’t burn. Learn more.
Easy low carb chicken marinade recipe.
This is a marinade that I used for an Instant Pot shredded Asian beef recipe. The simple ingredients I used are olive oil (or vegetable oil), soy sauce, lots of garlic, ginger and Lakanto golden sweetener. You can use a little salt and black pepper too if you want but when using soy sauce I always feel there is enough saltiness.
You can also use Swerve brown sugar sweetener instead of the Lakanto golden. These sweeteners are sugar substitutes for regular brown sugar. If you don’t care about carbs you can just use the same amount of brown sugar in their place.
Low carb vegetables to use in your kebabs.
For these kebabs I used mushrooms, yellow zucchini, colorful bell peppers, and purple onion. You can use whatever vegetables you prefer. Here are some carb counts for standard kebab veggies and you can pick what you like.
- mushrooms (1.6g net carbs per cup)
- bell peppers (5.9g net carbs per cup)
- zucchini (2.7g net carbs per cup)
- cauliflower (3.2g net carbs per cup)
- purple onions (12.2g net carbs per cup)
- grape tomatoes (4.8g net carbs per cup)
- green beans (4.3g net carbs per cup)
- radishes ( 2 net carbs per cup)
- asparagus ( 2.4 net carbs per cup)
- carrots ( 7.4 net carbs per cup)
- broccoli ( 6.1 net carbs per cup)
How to make air fryer chicken kebabs or skewers.
Step 1: Cut the boneless skinless chicken breast into bite size chunks as well as the vegetables you want to use. Place the raw chicken chunks in 1 large ziplock bag and the veggies in another one.
Note that I used chicken breast but you can also use boneless, skinless chicken thighs if you prefer. It shouldn’t make much difference time wise either.
Step 2: Mix the marinade ingredients in a small bowl by adding the olive oil, soy sauce, brown sugar sweetener sweetener, crushed garlic, grated ginger salt and pepper. Pour ½ of the marinade over the chicken pieces and ½ over the vegetables in each bag. Mix it around well before sealing.
Refrigerate over night or make it early in the morning if you are serving it for dinner.
Step 3: When ready to eat, place the pieces of veggies and chicken onto skewers. Make sure your skewers are small enough to fit in the basket of your air fryer.
Step 4: Spray the basket of the air fryer with nonstick cooking spray and then place the skewers inside in a single layer. Cook at 380°F for 12-15 minutes or until the chicken reaches an internal temperature of 160°F when using a meat thermometer. Cooking times may vary.
Step 5: When the chicken skewers are done, take them out and place on a plate. Let the rest for a few minutes before serving. Or alternatively you can take them off the skewers and serve everything on a platter.
I like to eat a chicken kebab with cauliflower rice for a low carb meal. The rest of my family eats it with white rice and a nice green salad to make it a complete meal.

How to make chicken skewers on the grill or in the oven.
You can just make these air fryer chicken skewers on the grill or in a grill pan too. Times may vary on the grill but it will take roughly 15 – 20 minutes.
You could also just add everything to a sprayed cookie sheet and bake at 400°F for 15 minutes, flip and then for another 10-15 minutes.

Low Carb Air Fryer Chicken Kebabs
These low carb air fryer chicken kebabs are very easy delicious, as well as healthy! The delicious Asian marinade goes perfectly with both the chicken and vegetables. Each serving has only 4.5g net carbs.
Ingredients
- 2 pounds chicken breasts, cubed
- 2 tablespoons olive oil (or vegetable oil)
- ½ cup soy sauce
- 6 cloves garlic, crushed
- 1 teaspoon grated fresh ginger
- ½ cup Lakanto golden sweetener ( can also use Swerve brown sugar sweetener)
- 1 red pepper, chopped
- ½ red onion, chopped
- 8 mushrooms
- 2 cups zucchini, chopped
Instructions
- To make the marinade, get out a medium bowl and mix soy sauce, garlic, ginger, olive oil and Lakanto sweetener. Split the marinade between 2 large ziplock bags. One is for the pieces of chicken and the other for the veggies.
- Chop up the chicken into 1 inch cubes and add to one of the bags. Then chop up the vegetables iinto chunks and add to the other baggie. Mix around to get the marinade on everything. Place into the refrigerator overnight or early in the morning for your dinner that night.
- Take out the baggie and place the vegetables and chicken on wooden skewers. NOTE: Make sure your skewers fit in your air fryer basket.
- Spray the air fryer basket with nonstick cooking spray and then lay the chicken kabobs in the basket in a single layer. Set the temperature to 380°F for 12-15 minutes or until the chicken reaches and internal temperature of 160°F with a meat thermometer. Cooking times may vary.
- Take off the skewers to eat. Serve with cauliflower rice or white rice and green salad to make it a meal.
- Store leftovers in an airtight container.

Did you use 1/2 cup powder or liquid lakanto sweetener in the recipe for the Asian Kabobs? OI am not familiar with the particular artificial sweetener so I am clueless.

Hi Carole, it’s powder not a liquid. Lakanto sweetener is a granular brown sugar sweetener. You could us Swerve brown sugar if you have it or just regular granular sweetener. But if you have brown sugar type sweetener it would be best. Hope that helps and you enjoy it!
