Cabbage is one of the most delicious and healthy vegetables that I have discovered on my low carb journey. I learned many many years ago that it’s can eat it as a pasta and that opened my eyes to this humble veggie. So today I have gathered 28 cabbage recipes that will hopefully open your eyes and help you if you are on a keto diet or even trying find something new to do with cabbage.
I have not added my pork and sauerkraut recipes that are very popular because even though they have cabbage in them they are more about the prepared sauerkraut.
Is cabbage low carb?
Yes it is. I cup of raw cabbage has roughly 4.1g of carbs and about 2g of fiber which gives a net carb value of 2.1g net carbs. And it’s low calorie with only 22 calories per cup.
There are many delicious ways to eat cabbage on a low carb diet. I often use it as a pasta substitute. I cut in in thin strips like noodles and use it in Asian inspired meals instead of Udon (see below) and in Italian dishes like lasagna (see below) or Alfredo style. Of course it’s great as a slaw or in soup and casseroles and sauerkraut (which you can find this this low carb pork and sauerkraut dish which is not listed below.

Healthy benefits of cabbage.
Cabbage is a very nutritious vegetable. It is high in vitamin C, K and many minerals. It’s low calorie and low carb and it’s very filling. It’s also a good source of insoluble fiber and soluble fiber which can be very gut friendly (read more).
As I mentioned above it’s low calorie, low carb and it’s also inexpensive and easy to prepare. You don’t even need to season cabbage as it tastes delicious just when you saute in with sausages or ground meats. And of course it’s delicious when raw in slaws and salads. I love the crunch it adds and it’s never wilts like lettuce does.
