I’m always looking for quick keto dinners for my family and with the air fryer that makes it much easier. Today I remembered a baked tilapia recipe that I made a long time ago and decided to use chicken so today I have this keto air fryer ranch chicken breast recipe.
t’s not exactly the same as the tilapia as today I used a packet of ranch dressing seasoning along with the mayo and parmesan cheese to make a creamy cheesy topping and give it that ranch flavor.
This is the kind of easy dinner that your whole family will like and not even care that it’s a keto recipe. Especially if your family thinks ranch is it’s own food group! So if you are on a low carb diet and are trying to find a weeknight meal that the entire family will eat this is it!
Recipe ingredients I used.
This easy recipe only need 5 simple ingredients – skinless, boneless chicken breast, mayonnaise, garlic cloves, ranch seasoning mix and parmesan cheese.
I have used asiago cheese before and it also come out great so you can substitute that for the parmesan if you wish. Other cheeses would not work as well though.
You could also use boneless chicken thighs but you don’t want pieces with skin on them.
How to make keto air fryer ranch chicken breast.
Step 1: Preheat air fryer. In the meantime take the chicken pieces and cut them in half lengthwise as you would a bagel. If you have uneven thickness in the cutlets, pound thinner with a meat tenderizer or mallet. You can even use a heavy skillet.
You want uniform, thin pieces so they cook quickly and have a good ratio of meat to topping.
Step 2: Mix together the mayo, crushed garlic, ranch mix and parmesan cheese in a small mixing bowl. Dab dry chicken breasts with a paper towel then spread the ranch mixture over top each piece of chicken as pictured below. While I have them on a baking sheet you can also just add them to air fryer basket.
Step 3: Spray the basket of the air fryer and place the pieces in carefully. You may have to do this in two batches depending on how big your air fryer is. Fry the chicken at 350°F for 12-15 minutes.
Make sure to check it toward the end to make sure it’s not burning and over cooked. The internal temperature should be 165°F when using a meat thermometer.
Step 4: Take out of the air fryer and let sit for a few minutes then serve. Store leftovers in an airtight container. (Please scroll down for the printable recipe card.)
So you see this is a very easy recipe but it’s so good! The rich and creamy topping gives so much flavor to the lean cut of chicken.
To make this in the oven.
Instead of the air fryer method you can make this chicken dish in the oven. Preheat oven to 350°F. Prepare the cutlets as the recipe calls for and then place on a sprayed baking sheet.
Cook for 15-20 minutes until the top is lightly brown and the internal temp of the meat is 165°F. Note that cooking time may vary depending on the thickness of your cutlets.
