There is nothing better than a ripe fresh tomato in summertime. It seems to take all summer to get them coming and then bang, you have a million of them all at once. Well over the years I’ve made some very tasty recipes using fresh tomatoes and today I have 22 to share with you.
Below you can see a bunch of Roma tomatoes we have growing right now. We also have a big stash of poblano peppers and banana peppers to use up. I like to cook with this variety of tomato because they don’t have a lot of seeds or water content. But honestly and type of fresh tomato is tasty to me.
Different ways to use fresh tomatoes from your garden.
Besides the 22 recipes below, these are some of my favorite ways to use my husband’s garden tomatoes.
- caprese salad – Just slice them along with some fresh buffalo mozzarella, fresh basil and good olive oil. Sometimes we also use balsamic vinegar. It’s a simple but delicious summer salad.
- summer nachos – My sister used to make a summer chicken nachos and use a bunch of diced fresh tomatoes on top along with some cilantro and sour cream. It’s a fresh way to eat nachos. Chopped avocado would be nice too.
- sandwiches and burgers – My husband introduced me to the best summer sandwich and that is salami, fresh tomatoes and mayonnaise on 2 pieces of toasted bread. Don’t knock it until your try it. It’s delicious!
- pasta and pasta salads – I have a recipe below for a very easy fresh pasta dish which uses raw tomatoes and it’s delicious and quick! However raw fresh tomatoes area also delicious in cold pasta salads.
- pizzas, flatbreads and tarts – Making a white pizza, Margherita pizza or flatbread with ripe tomatoes and garlic is always a winner. Play around with puff pastry, pizza dough or crescent rolls to make tomato tarts.
- roast for a simple side dish – If you have a lot of grape or cherry tomatoes, try to roast them in a pan with olive oil, salt and pepper or some Italian seasoning. Once the start to brown or wither they are done. They have so much flavor and make a great side dish or mix it with other vegetables to add sweetness and tanginess.
- stuff them – Below I have a few stuffed tomato recipes but really any kind of tuna salad, chicken salad, etc would taste great in a ripe tomato.
