I discovered these premade flatbread pizzas from Aldi last year and I just love them for a quick meal. Today I had a bunch of zucchini and even more tomatoes laying on the counter and I whipped up this easy zucchini flatbread in 15 minutes. My family loved it and they don’t even eat zucchini normally.
There are two cheeses on this vegetable pizza – fresh mozzarella and fresh parmesan. I hand grated them so they would just melt together and so lots of flavor. And of course I used fresh basil from our garden too so this is much like a white pizza or Margherita pizza with added zucchini.
So if pizza is your comfort food and you need a quick and tasty vegetarian dinner this summer give this recipe a try. And if you need an easy appetizer for a party or get together this works well for that too. Plus it’s very easy to change up using different veggies or fresh herbs.
Recipe ingredients I used and substitutions.
The simple ingredients I used for this recipe is a pre-baked flatbread, fresh mozzarella, parmesan, garlic clove, olive oil, hot pepper flakes, fresh basil, tomatoes, zucchini and salt. I used hot pepper flakes for a little heat but you can substitute with black pepper if you want.
Pre-baked Flatbread
I buy these wonderful already made flatbreads from Aldi. They come two to package and they are perfect for recipes like this. No messy flour, yeast or water necessary. You could substitute with naan bread, pitta bread or a premade thin pizza crust. Lavash bread would also work.
If you want to make your own dough or use store bought pizza dough you will want to bake the base before adding the toppings.
Fresh Mozzarella Cheese and Parmesan Cheese
I love the savory flavors of both of these cheeses together. I think the fresh mozzarella really makes this dish but you can use regular packaged mozzarella if you want. Also I like to shredded to make it melt more evenly so try that if you use the fresh. I also like to grate my own parmesan cheese and high suggest you do that. You can find it already shredded/grated at Aldi.
Fresh Tomatoes and Zucchini
The purpose of this recipe was to use the fresh zucchini and tomatoes from my garden. You could use cherry tomatoes instead if you have them on hand. So you really should take advantage of fresh garden veggies if you can. However you can also use other fresh vegetables like sweet bell peppers, hot peppers, mushrooms, onions, eggplant, etc.Just make sure slice everything very thinly.
Garlic and Basil
I used fresh garlic and fresh basil leaves for another layer of flavor. If you don’t have fresh garlic you can use a sprinkle of garlic powder and you can also use dried basil. However the fresh basil really add more flavor so if you have some give it a try. You can also use fresh parsley, mint, oregano, thyme etc.
How to make an easy zucchini flatbread recipe.
Step 1: Add olive oil to a little bowl and add the crushed garlic. Mix and set aside. Then preheat oven to 400°F and spray a rimmed baking sheet with nonstick cooking spray.
You could also just place this right on the oven rack but I find it easier to handle with a baking tray.
Step 2: Place the pre-made flatbread on the baking sheet. Brush the garlic oil over the surface of the flatbread. Season with salt and the hot pepper flakes on top. If you don’t like heat of chili flakes you can use black pepper.Â
Step 3: Thinly slice zucchini and shredded the 2 cheeses. I love my cheese grater which I could not recommend more. I’ve used it to slice the zucchini and shredded both cheeses. Below you can see how the different size blades work.
Step 4: Place the zucchini slices and tomato on the bread then sprinkle both the fresh mozzarella and parmesan on top.
Step 5: Bake for 8-10 minutes in the preheated oven until the cheese is melted and the crispy edges are golden brown. If you want the cheese to get browner you can place it under the broiler for 2-3 minutes. Watch that it doesn’t burn though.
Step 6: Take it out of the oven and then sprinkle minced fresh basil on top. Cut into pieces once it’s cooled a bit. Store leftovers in an airtight container. Please scroll down to view the printable recipe card.

Easy Zucchini Flatbread Recipe
This easy zucchini flatbread recipe is perfect for using fresh veggies from your garden. You can whip this vegetarian meal up in just 15 minutes and it's sure to please. Can also be eaten as an appetizer.
Ingredients
- 1 flatbread (pre-made)
- 2 tablespoons olive oil
- 1 clove of garlic, crushed
- ½ teaspoon salt
- ¼ teaspoon hot pepper flakes (optional)
- ¼ cup zucchini slices (thinly cut)
- 2 small tomatoes (thinly sliced)
- ½ cup fresh mozzarella, grated or chopped
- ¼ cup fresh parmesan cheese, grated
- 4 fresh basil leaves, minced
Instructions
- Preheat oven to 400°F. Get out a baking sheet and spray with nonstick cooking spray. Lay the pre-made flatbread on the baking sheet. Note you could bake these right on the rack of the oven but they get just as crispy on a baking tray and there is less mess.
- In a small bowl add the olive oil and crushed garlic. Mix together then brush all over the bread. Sprinkle the salt and hot pepper flakes over the surface. You can use black pepper instead of hot pepper flakes if they are too spicy for you.
- Lay the slices of zucchini all over the bread then add the thin slices of tomatoes. Sprinkle the fresh mozzarella cheese evenly over the vegetables and then top with the grated fresh parmesan.
- Place in the oven and bake for 8-10 minutes until the cheese has melted and the crispy edges are golden brown. If you want the cheese to be more browned you can place under the broiler for 2-3 minutes but watch that it doesn't burn.
- Take out of the oven and sprinkle the minced fresh basil over top. Let cool a few minutes then cut and serve. Store leftovers in an airtight container.
