I’ve recently discovered the joys of Joseph’s Lavash bread and pitas. I like them because they taste delicious but also because they are pretty low in carbs and easy to find at our bigger grocery store or Walmart.
In an attempt to eat more veggies this summer I came up with the veggie and hummus lavash bread pizza. It was really tasty to me and I love that it was low calorie and pretty low carb. One fourth of the pizza has just 6.4 grams of net carbs and just 67 calories.
This turned out to be a great light lunch for me that filled me up and was pretty healthy to eat. I love the taste of plain or flavored hummus and veggies to begin with and the lavash bread made the perfect base for pizza and to bring it all together.
Recipe ingredients I used and substitutions.
Below you can see the simple ingredients I used which was red pepper hummus, sweet peppers, cherry tomatoes, red onion, Joseph’s wheat lavash bread and fresh basil.
Joseph’s Lavash Bread
I used the Joseph’s lavash bread as the base of the pizza. It’s very soft and thin but it’s pretty big and the perfect vehicle to make a flatbread or pizza or even wraps or sandwiches. You can use other flatbread products that are thin such as Flatout. though I like Joseph’s better.
NOTE: You will find these products in the bread aisle, or by the deli department of your grocery store. If you use their product finder and it says it’s at your grocery store you might have to ask where they display it.
Hummus
I used a roasted red pepper store bought hummus from Aldi. You can use your favorite flavor of hummus and there are so many good ones out there. Actually there was a dill pickle hummus at Aldi a few months ago which would be great for this.Â
I really like the hummus as “sauce” for this pizza but you could also try flavored cream cheese. Or you can add some flavored olive oil along with some type of cheese like mozzarella cheese, fresh parmesan or asiago. A pesto sauce would also be tasty.Â
Veggies
I used a colorful combination of fresh vegetables for my toppings and they also happen to be my favorites. I used slices of sweet bell peppers, red onion and cherry tomatoes. Other options can be olives, hot peppers, mushrooms, yellow squash, zucchini, carrots, broccoli, cauliflower, spinach, etc.
Fresh Basil Leaves
I have a herb garden in the summer so I use fresh herbs whenever I can. So I prefer the fresh basil but you can use any fresh herbs you want like fresh parsley, oregano, thyme, cilantro, or even mint would be great. You could also use chopped fresh baby spinach leaves to give the pizza more color and flavor.
Another option is to use a bit of a balsamic glaze on top after it’s done baking. I thought that would be nice with the fresh basil. However I didn’t feel like making one and I didn’t have a bottle of balsamic glaze on hand so I did not. There really are lot of ways to make this recipe your own.
How to make veggie and hummus lavash bread pizza.
Step 1: Get out a baking sheet and spray with nonstick cooking spray then set aside. Set the oven to 400°F.
Step 2: Place a piece of lavash bread on the prepared baking sheet and then spread a layer of hummus over the pizza base. Spray the exposed edges with nonstick cooking spray.
Step 3: Slice the veggies as thin as you can and place them on top of the hummus pizza in a single layer. Season with salt and black pepper if you wish.Place the baking sheet in the preheated oven and bake for about 5-6 minutes.
Check the pizza and if the vegetables are not wilted you might want to bake it for 3-5 minutes until the edges turn golden brown. You can also just place this under the broiler to bake it. Make sure to watch so it doesn’t burn.
Step 4: While the hummus pizza is baking mince the fresh herbs, basil in my case. When the pizza is done let it cool a bit then sprinkle the fresh basil leaves on top. And if you want to add a little spice or heat, sprinkle a few pepper flakes on top.
Using a pizza cutter, cut the pizza into fours or eight smaller pieces. I found that ¼ of the pizza is a good size for a meal for me.
Store leftovers in an airtight container or place in on a plate and cover with plastic wrap and refrigerate. Reheat the leftovers in the oven. Please scroll down to view the printable recipe card.
I ate this lavash flatbread pizza for lunch but you could make it for dinner. Just add a green salad and you are set!
You could also add some protein to make it more substantial if you want. I would use chopped rotisserie chicken, chopped shrimp, or even a little bacon or Italian sausage. It all has to be precooked though.
If you want to add a balsamic glaze.
I mentioned above a balsamic glaze might be nice on top. If you are interested in making one here is how.
Add some balsamic vinegar to a pan and bring to a boil. Then turn it down to a simmer until the quantity has reduced about half. You’ll know it’s ready when it becomes thicker. Let cool a bit before drizzling over the top.

Veggies and Hummus Lavash Pizza Recipe
For an easy and healthy lunch or dinner, try this vegetable and hummus lavash bread pizza recipe. Creamy hummus topped with crispy veggies and fresh basil all on a thin piece of lavash bread. And low calorie and lower in carbs.
Ingredients
- 1 Joseph's Lavash Bread
- ¼ cup hummus (any flavor)
- ½ cup bell pepper, thinly sliced
- ¼ cup red onion, thinly sliced
- 5-6 grape or cherry tomatoes sliced
- 2 tablespoons basil leaves, minced
- salt and black pepper to season
Instructions
- Preheat oven to 400°F. Spray the baking sheet with nonstick cooking spray.
- Place a piece of lavash bread on the baking sheet and spread the hummus evenly on the pizza base.
- Thinly slice the veggies and place on the pizza. Season with salt and black pepper then spray the exposed edges of the pizza with nonstick cooking spray. Place in the oven and bake for 5-6 minutes.
- Check the pizza and if the veggies are not wilted, place it back in for a few more minutes. You can also use the broiler if you want, just make sure to keep a watch so it doesn't burn.
- Take out of the oven and let cool then scatter the fresh basil on top. Cut into 4 big pieces or 8 smaller and serve. Store leftovers in an airtight container.
