I finally made a curry chicken salad recipe. I think I told you it is one of my favorite flavors for chicken salad. Then again I like curry anything, Indian, Thai you name it, I love it’s delicious flavors.
But this chicken curry salad is creamy with a bit of spice and has crunchy celery, buttery cashews and fresh cilantro. It all works so well together with the convenience of already cooked rotisserie chicken!
And instead of eating it on bread I stuffed it in one of our ripe tomatoes from the garden and it made the perfect low carb lunch. But you can eat this easy curry chicken salad as is or on bread for a sandwich or make a wrap if you are not on a low carb diet.
This is a good recipe to make with leftover chicken meat and to use fresh garden tomatoes in the summer time. This recipe made 8 small stuffed tomatoes which were great for a quick lunch or even a snack.
Recipe ingredients I used.
All you need to make this easy cashew chicken curry salad is cooked chicken breast, red onion, celery, cashew halves, sour cream, cilantro, yellow curry powder, orange juice, mayonnaise, salt and black pepper. I did you will also need a 8 small tomatoes or 4 larger ones.
I was trying to keep this recipe low carb so I did not use any kind of sweet element to this dish. However if you like a bit of sweet to complement the spice you can add some raisins or fresh grapes. I think golden raisins or green grapes would go nicely. Use about ¼ cup raisins or grape halves if you don’t care about carbs.
Below you can see the curry powder I used which has a milder flavor. You can easily find this in bigger grocery stores. Not only does it add a lot of taste, but it also adds a nice color from the yellow turmeric in it. If you want more heat you can use a hot curry powder. Or add a pinch of cayenne pepper or hot pepper flakes for a bit of heat.
You can also use Greek yogurt as a substitute for yogurt. Originally I used Greek yogurt but today I didn’t have any use sour cream and liked it a bit more as it had less of that tangy flavor.
I like to use plain rotisserie chicken in this recipe as is a so much easier. As I’ve mentioned before I buy a couple of them from Costco (only $5), chop up the meat into bite sized pieces, freeze and then use it for recipes like this and for soups and casseroles.
In the past I had used avocado too but it doesn’t make or break this recipe. Use it if you want more creaminess but I had just put it in because I had a bunch of them. It really isn’t necessary.
How to make this curry chicken salad recipe.
Step 1: Using a melon baller scoop out the insides of the tomatoes if using and set aside. You want them be come cups that will hold the chicken salad.
Step 2: Get out a medium bowl and add the sour cream, orange juice, mayonnaise and curry powder. Mix together to make the creamy dressing. Then add all the rest of the ingredients and mix well. Store for an hour or so before serving.
This is the finished curry chicken salad! Season with salt and black pepper if you want.
Step 3: If you are using the tomatoes, just fill them with the chicken mixture and then garnish with fresh cilantro. The tomatoes are very convenient to eat out of and great when you have a nice crop of tomatoes in the summer. Another low carb option is to eat it on a bed of greens or make lettuce wraps.

Though I wanted to keep this recipe low carb, this tastes great on as a sandwich or in a tortilla to make a wrap. You can also find some good keto bread and tortillas if you are interested in this and want to stick to a low carb diet.
Originally I used this curry powder which I got when we lived in England and I just love it. But today I used one that has a milder flavor and it was just as good. You can use your favorite kind as they can vary quite a lot. If you want a bit of heat, use a hotter one.

Ingredients
- 4 large or 8 small ripe tomatoes
- 1 ½ cups cooked chopped chicken breast
- ¼ cup chopped red onion
- ¼ cup celery chopped
- â…“ cup cashews
- ¼ cup cilantro leaves
- 2 tablespoons sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon orange juice
- 2 teaspoons curry powder
- ½ avocado, chopped (optional)
- salt and black pepper to taste
Instructions
- Scoop out the middle of the tomatoes to make a bowl.
- Mix the yogurt, mayo, curry powder and orange juice to make the dressing.
- In a big mixing bowl add your cooked chopped chicken breast, onion, celery, cilantro and cashews. Add dressing and mix well.
- Stuff each tomato with chicken salad. Refrigerate until ready eat. Store leftpvers in an airtight container.
