These tomatoes stuffed with curried chicken salad are a delicious way to use those fresh tomatoes from the garden. The flavorful chicken salad is nested in the cool tomatoes and makes a delicious lunch!
I finally made some curried chicken salad. I think I told you it is one of my favorite ways to eat chicken salad. Then again I like curry anything, Indian, Thai you name it, I love it. Instead of eating it on bread I stuffed it in one of our ripe tomatoes from the garden and it made the perfect lowish carb lunch.
Look at these beauties from our garden. I wish we could have fresh tomatoes all year round but here in Pennsylvania it’s just in the summer. Oh well that makes me appreciate them all the more. To make the cups I used a melon ball scoop and took out the middle. Just enough to make a cup.
For the curried chicken salad I used cooked rotisserie chicken. I’ve told you before that I like to buy a couple of them from Costco (only $5), cut them up, freeze the meat and use the bones for bone broth. It comes in handy for recipes like this and for soups and casseroles.
The dressing is just simply Greek yogurt, mayo, curry powder and a bit of orange juice for sweetness. I got this curry powder when we lived in England and I just love it. Toss the chicken, onions, celery, cashews and chicken and add in a bit of cilantro too. Yum! A note about the avocado: it doesn’t make or break this recipe. Use it if you want more creaminess but I just put it in because I had a bunch of them. It really isn’t necessary.

Yet another way to use those garden tomatoes, this curried chicken salad is delicious. The spicy curry dressing goes great with the crunchy cashews and veggies to make this one of my favorite chicken salads. Enjoy!
Tomatoes Stuffed with Curried Chicken Salad
Ingredients
- 4 large or 8 small ripe tomatoes
- 1 1/2 cups cooked chopped chicken
- 1/4 cup chopped red onion
- 1/4 cup celery chopped
- 1/3 cup cashews
- 1/4 cup cilantro leaves
- 1/2 avocado chopped optional
- 2 Tablespoons Greek yogurt
- 2 Tablespoons mayonaise
- 1 Tablespoon orange juice
- 2 teaspoons curry powder
Instructions

Scoop out the middle of the tomatoes to make a bowl.

Mix the yogurt, mayo, curry powder and orange juice to make the dressing.

In a big mixing bowl add your chicken, onion, celery, cilantro and cashews.

Add dressing and mix well.

Stuff each tomato with chicken salad.
