While winter might be comfort food season, I like a good low carb casserole any time of the year. So when my husband handed me yet another huge zucchini from his garden I thought about making this low carb zucchini au gratin casserole.
I’m the only one in my family that eats zucchini but that’s ok because I love it. I made this casserole, ate it for lunch and froze portions for easy microwaveable meals. This zucchini casserole makes 4 good servings and each one has only 5.1g net carbs.

Zucchini is a low carb vegetable and best of all it’s very versatile. You can eat it raw, stuffed, made into noodles or in casseroles and soups! It’s also great roasted. The nutritional information for 1 cup of zucchini chopped is 2.6g net carbs according to the USDA.gov. So grab those garden zucchini and get cooking.
Low Carb Zucchini Au Gratin Recipe
It doesn’t really matter what size zucchini you use so this is a good recipe for those big clubs people are always trying to get rid of.
Let’s get started. Chop the zucchini and microwave for 3 minutes. Then put it in a tea towel and gently squeeze out the water. Zucchini has a lot of water in it and you want it get out as much as you can because there will be more after cooking.
Now just add the cooked zucchini to a baking dish and mix in the dried minced onion, salt and pepper. Top with shredded gruyere cheese. I used gruyere but Swiss cheese would also work.
Pour the cream over top and then sprinkle the pork rinds and parmesan cheese. That’s all there is to it.
Pop it into the oven and bake for 45 minutes until nice and bubbly. Note there still may be some excess liquid but you’ll see that it won’t effect the taste.

Low Carb Zucchini Au Gratin Casserole
This low carb zucchini au gratin casserole is a delicious side dish to make this summer. Take one of those huge zucchinis from your garden and quickly make this cheesy keto casserole with only 5.1g net carbs.
Ingredients
- 4 cups zucchini, chopped
- 1 tablespoon dried minced onion
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 ½ cups gruyere or Swiss cheese, shredded
- ¾ cup cream, heavy
- ½ cup ground pork rinds
- ¼ cup Parmesan cheese, grated
Instructions

Preheat oven to 375°F.

Add chopped zucchini to the microwave and cook for 3 minutes. Take out the zucchini and place in a tea towel and gently squeeze out the excess water.

Place in a sprayed baking dish and mix with onion, salt and pepper seasonings.

Sprinkle gruyere cheese even over top and then pour the cream all over.

Mix the Parmesan cheese and ground pork rinds and then sprinkle over the top.

Bake for 45 minutes until brown and bubbly.
