This keto cheesy green bean casserole doesn’t have any of the crispy onion topping. It also doesn’t use any canned soup yet the creamy mushroom sauce is super flavorful. This is a delicious low carb holiday side dish with fewer carbs. It’s easy to make and only has 2.9g net carbs!

I’m redoing this post and was surprised to find I have so many keto Thanksgiving recipes. I really this keto cheesy green bean casserole that doesn’t have any onions, canned cream of mushroom soup, flour or garlic like the traditional recipe.
It was what we had many years ago. Since then I have also made a similar recipe with my version of keto fried onions to make the crispy topping. Both healthy versions are really good and you can learn more about that other recipe below if you are interested.
This dish is creamy, cheesy and delicious. It’s a great keto side dish for Thanksgiving because no one will know it’s low carb. So if you are trying to stick to you low carb diet give it a try.
Recipe ingredients I used and substitutes.
The simple fresh ingredients I used are green beans, gruyere cheese, heavy cream, butter, thyme and white mushrooms. You can also season with salt and black pepper but sometimes the cheeses have enough salt so I did not.
Fresh Green Beans
Below you can see the green beans I buy at Aldi. I like the French style green beans because they are a little thinner, uniform in size and already cleaned. You can use any type you want and even frozen beans but it’s best with fresh beans.
Shredded Gruyere/Swiss Cheese
Again I buy this cheese all the time. It has great flavor and goes really well with this dish. If you don’t have any or can’t find it you can substitute with just Swiss cheese or try other types of cheese like Gouda, parmesan or possibly a white cheddar cheese. If you have an Aldi near you they always have it.
Heavy Whipping Cream
This is rather important to making the cheesy and creamy sauce. I don’t think you can really substitute with any nondairy product like almond milk or coconut milk. Coconut milk. is thick and creamy but will give the dish an odd taste. You could use half and half though.
Fresh Mushrooms
I only like to use fresh button mushrooms. Canned mushrooms have an odd texture to me and not much flavor. I like to brown the mushrooms in butter first so they get a golden brown color and adds another layer of flavor.
How to make keto cheesy green bean casserole.
Step 1: Preheat oven to 350°F. I will be baking this dish in an ovenproof pan but if you don’t have one you will want to spray a casserole or baking dish with nonstick cooking spray and set aside.
Step 2: Place the green beans into a microwaveable dish. I use this microwave pot all the time to steam my veggies. Precooking in the microwave saves time. Cook them for 6-8 minutes.
Step 3: While the beans are cooking, get out a large oven ready saute pan or deep skillet and heat to medium high heat. Add 1 tablespoon of butter and when it melts add the slices of fresh mushrooms. Turn the heat down to medium heat and saute until they start to turn brown.
Step 4: Next add in the cream to the mushrooms along with another tablespoon of butter, half of the shredded cheese and the dried thyme. Mix together until everything melts and combines well.
Step 6: When the beans are done, add them to the creamy sauce and mix well to coat all the beans. If there is some excess water with the beans that is ok. It will thin the thick sauce.
Step 7: When everything is well combined, top with the remaining cheese and place in the preheated oven. Bake for 25-30 minutes or until the cheese is brown and bubbly.
If you are using a casserole dish or baking dish, just spoon the beans into it, top with cheese and bake.
Let cool before serving. If you want it browner on the top you can place it under the broiler for a few minutes. Store leftovers in an airtight container. Please scroll down to view the printable recipe card.

It does use pork rinds to make the crunchy topping and that sometimes I like and sometimes I don’t so I go back and forth between these two versions depending on who’s eating it with me.
Note if you like using pork rinds, try the store bought pork panko topping. Other wise you have to buy pork rinds and use a food processor to crush them. this makes life much simpler.

Keto Cheesy Green Bean Casserole Recipe
This keto chesy green bean casserole recipe is a delicious holiday dish with few carbs. Easy to make and only 2.9g net carbs!
Ingredients
- 1 pound fresh green beans
- 8 ounces fresh mushrooms, sliced
- ½ cup heavy whipping cream
- 2 tablespoon butter, divided
- ¼ teaspoon thyme
- 1 cup gruyere cheese, shredded ( can sub with Swiss)
Instructions
- Preheat oven to 350°F. I used an oven ready pan to make this dish. If you don't have one you can spray a casserole dish with nonstick cooking spray and set aside.
- Add green beans to a microwave safe bowl and cook for 8 minutes.
- While they are cooking, get out an oven proof large saute pan or skillet and heat to medium high heat. When it's hot add 1 tablespoon of butter then add the mushrooms. Turn the heat to medium heat. Cook until there is no water left in the pan and they are starting to brown, about 5 minutes.
- Add in the rest of the butter, heavy cream and thyme. Mix well and then add half of the gruyere cheese. Mix until it starts to melt and creates the cheese sauce.
- When the green beans are done in the microwave, add them to the pan and stir to coat with the sauce. If the sauce seems to thick you can add a bit of the water from the green beans to thin it.
- Sprinkle remaining cheese over top and place in the oven for 25-30 minutes until brown and bubbly on top. If you are using a casserole dish spoon everything into it and top with cheese and bake.
- Serve immediately. Store leftovers in an airtight container.
