To continue on my keto Thanksgiving recipe roll, today I made for you a gluten free, keto stuffing. It’s similar to the low carb stuffing I used for my baked stuffed chicken thighs but I tweaked it with seasonings to make it have a more traditional flavors of Thanksgiving.
It doesn’t use low carb bread, chicken broth or pork rinds. But it does use ground sausage and almond flour with other classic stuffing ingredients to create a tasty dish thats very easy to make. I didn’t want to use keto bread because it’s doesn’t always have the same flavor as white bread.
It is so tasty I actually ate a serving as my dinner. You won’t believe that there is no bread cubes in it like traditional stuffing and it goes great with turkey, chicken or pork! It’s great for holiday meals for those on a low carb diet. Each serving has only 2.6g net carbs so let’s check it out.
Recipe ingredientsย I used and substitutions.
The simple ingredients in this gluten free stuffing recipe were breakfast roll sausage, cheddar cheese, Parmesan cheese, eggs, yellow onion, celery, garlic, sage, thyme, butter and almond flour.
Ground Pork Breakfast Sausage and Almond Flour
I used breakfast sausage that comes in a roll at the grocery store. It’s not hot Italian sausage but rather breakfast sausage like Bob Evans or Jimmy Dean brands of sausage.
The almond flour along with the cheese and egg creates the bready texture and flavor of the stuffing. You really don’t want to use regular flower or coconut flour in this recipe.
Cheeses and Egg
The parmesan cheese adds flavor and act like a binder along with the egg for this recipe as does the cheddar cheese. You could substitute the cheddar with other cheeses but I feel cheddar adds the best flavor.
Veggies and Spices
Most classic stuffing recipes have celery and onion in them so I used those and you wouldn’t want to substitute them though you could use white onion. Same goes with the fresh garlic, dried thyme and sage. You could substitute with some poultry seasoning for the thyme and sage.
If you want to substitute the fresh garlic with garlic powder, ยผ teaspoon of garlic powder equals 1 garlic clove so you would want 1 teaspoon for this whole recipe.
How to make this keto stuffing recipe.
This is really simple to make and you bake it in the oven, but you can also use it to stuff chicken and pork chops. I have never stuffed a turkey ever so I’m not sure how this would be stuffed into one. So if you decide to do that, let me know how it goes.
Step 1: Preheat the oven to 375ยฐF. Get out a baking or casserole dish and spray with nonstick cooking spray and set aside.
Step 2: Heat a large skillet to medium heat. Add butter then celery and onions and saute for 2-3 minutes. Looking below you see that you just want them softened and the onions should be translucent.ย
Step 3: While that’s sautรฉing, melt the remaining butter in the microwave. Add the eggs to a large mixing bowl and beat them. Then break up the roll of sausage meat into pieces and add that along with the rest of the ingredients (including the melted butter and onion mixture.)
Step 4: Start mixing the stuffing mixture with a wooden spoon then use your hands. It’s pretty dense and when you put it in your prepared baking dish you want it to be as fluffy as possible. Don’t pack it down or it’s going to be a stuffing loaf. ๐
Step 5: Bake it in the preheated oven for 30 – 45 minutes. You want it to be golden brown on top but don’t want to dry it out. Baking time may vary so that’s why I gave such a large range of time.ย
If you want to add some color for presentation you can sprinkle some fresh parsley on top. Store leftovers in an airtight container. (Please scroll down to view and print the recipe card.)
What to make with leftover stuffing.
This is one of my favorite things to do with leftovers. Stuffing waffles are a delicious and fun way to eat Thanksgiving leftovers. Below are two different kinds I’ve made.
Below left is a waffle I made with regular stuffing along with leftover turkey, gravy and mashed potatoes. You could make this with leftovers from this recipe as well. You basically just grease a waffle iron and spoon the leftover stuffing in and cook until you have a waffle.

Ingredients
- 3 tablespoons butter
- ยฝ cup celery, finely chopped
- ยฝ cup onion, finely chopped
- 2 cups almond flour
- 1 cup cheddar cheese, grated
- 1 cup Parmesan cheese, grated
- 16 ounce ground pork breakfast sausage (in a roll)
- 4 eggs
- 4 cloves garlic, crushed
- 1 teaspoon sage (dried)
- 1 teaspoon thyme (dried)
- salt and black pepper to taste
Instructions
- Preheat oven to 375°F. Grease or spray a baking dish with nonstick cooking spray and set aside.
- Heat a saute skillet to medium heat and melt 1 tablespoon of butter. Saute the onions and celery until softened. The onions should be translucent. Let cool.
- In the meantime, melt the remaining butter in the microwave.
- In a large mixing bowl, beat the eggs. Then break up the roll of sausage into bite size pieces and add the rest of the ingredients and seasonings including the melted butter. Once the onion mixture has cooled add it as well.
- Start mixing with a large spoon then you might want to use your hands. The stuffing mixture is dense so it's easier with your hands.
- Lightly add the stuffing mixture to the prepared baking dish. Don't pack it down. I used my hands and put it in clumps so to keep it airy.
- Bake for about 30 - 45 minutes until the top is nice and golden brown. Let cool before serving.

I made this, came out very nice. Id ad a pic but I donโt see a way to. When I inputted al the ingredients into carb manager, it comes to 4.5 net carbs, not 2.6. Still very acceptable metrics for stuffing! Thank you.

Hi Annette, I use the LoseIt app and here is a photo of a screen shot to show you my calculations if you are interested.
I know different apps calculate things differently and the brands you use can affect the outcome too.
It’s best to use your own calculations and your own app for consistency sake.
Also I’ve noticed that sometimes apps have user inputed information in the listing and you never know if it’s accurate or not.
So my advice would be to use your own app and go from there. Good luck and let me know if you have any other questions.

What can I use instead of almond flour, my son has a severe almond allergy? Thanks

Hi Sandee, can he eat other nuts? You could use cashew or macadamia nut flour. Another idea is to use sunflower seed flour however that can turn green for some strange reason. Lastly try coconut flour but you would use less and make adjustments. Here are some websites with ideas for you. Hope that helps!
