I’ve been wanting to make these easy stuffed chicken thighs with low carb sausage stuffing for a long time. My sister in law talks fondly about her mother in law making a similar dish and it always sounded so good to me.

Making The Low Carb Sausage Stuffing
The basis of this stuffing recipe is very similar to my sausage and cheese muffins. However this time I used breakfast sausage, cheeses, eggs, spices and almond flour. I like this brand of almond flour the the best. You don’t need to cook the sausage, just mix all of the ingredients together to form the stuffing.
Making The Easy Stuffed Chicken Thighs
You should use chicken thighs with the bone in and with skin. You lift up the skin of the chicken thigh and add a scoop of the stuffing.
On top sprinkle a bit of paprika and salt for color. Then pop them in the oven and bake for about 45 minutes and baste half way through. That’s it!
I did not attempt gravy for this dish but I imagine using a low carb thickener like Thick-It-Up or glucomannan would thicken it up. There was no need for it today however I’ll tackle that next time and get back to you about it.
