If you follow this blog you probably notice a I make a lot of low carb breakfast recipes. However I don’t have many casseroles and since I love me a good casserole, I thought I’d give one a try. I have a lot of spaghetti squash sitting on the counter from my hubby’s garden and thought this would be a good base so I made this spaghetti squash low carb breakfast casserole! The squash gives this casserole a touch of sweetness and is a great substitute for potatoes. The savory sausage, peppers and cheese complete this tasty low carb casserole!

This particular recipe is a combination of my spaghetti squash pizza and my breakfast pizza with it’s squash base and breakfast pizza toppings. If you like this recipe, check those out. My most popular breakfast recipe is by far my low carb savory breakfast cookies. Those are great to freeze and reheat for a quick breakfast on the go.
How I like to cook spaghetti squash
I mention this many times in my spaghetti squash recipes, but I like to make mine in the Instant Pot. Just cut in half, clean out the seeds, add a cup of water and pressure cook for 5 minutes. I like that you can cook more that 1 squash at a time. I usually cook 2 and freeze the squash for later or use it for another recipe.
However you can also make it in the microwave. Just cut in half, clean out the seeds (and roast them because they are tasty) and the microwave for about 7 or 8 minutes until they are fork tender.
Spaghetti Squash Low Carb breakfast Casserole Recipe
You start by sautéing the sausage and peppers. Once they are done set aside and work on the spaghetti squash base. Mix the squash with eggs and cheese and press into an 8×8 inch baking dish. Spoon the sausage mixture evenly over the squash and sprinkle the cheddar cheese on top. Bake for about 20 minutes and that’s it!
I think next time I might mix all the ingredients together and see how that goes. Or maybe put them in muffin tins to make a breakfast muffin. This was very delicious and satisfying for me. This recipe made 9 servings and I ended up eating it for breakfast, lunch and dinner!

Spaghetti Squash Low Carb Breakfast Casserole
This spaghetti squash low carb breakfast casserole is your new best friend. Full of tasty toppings with a cheesy, spaghetti squash base makes for a delicious low carb breakfast. Each serving is only 3.9g net carbs!
Ingredients
- 1 cup peppers, diced
- 8 oz breakfast sausage
- 3 eggs
- 1 cup mozzarella cheese, shredded
- 3 cups spaghetti squash, cooked
- ½ cup cheddar cheese, shredded
Instructions

Preheat oven to 350 degrees F.

Add peppers and sausage to a large pan and cook until the sausage is browned and peppers are soft.

In a large bowl, add the spaghetti squash, eggs, and mozzarella cheese. Mix well and add to an 8x8 baking pan. Press down to make it even.

Spoon the sausage mixture over top and then sprinkle the cheddar cheese on top.

Bake for 20 minutes and then place under the broiler for a few minutes if you wish to make it browner on top.

Serve immediately.

Excellent way to use up the spaghetti squash from this years garden haul. It’s the only thing that did really well. I did add onion, red pepper flack and course ground black pepper. But this was fabulous. Don’t skip the broiling step. It took it up a notch!
