Lately I have been craving casseroles. My mom never really made casseroles growing up but I find they are easy, tasty and pure comfort food. Since there are such great deals on hams right now, I made one for dinner and of course had leftovers.
I decided to make this low carb broccoli & ham casserole! I had some for lunch and then froze the leftovers for more low carb lunches next week. It has that cheesy broccoli casserole taste that goes great with salty ham. YUM!
Casserole Ingredients
There are only 5 ingredients in this casserole: ham, broccoli, cheddar cheese, cauliflower and cream cheese. The cauliflower along with the cheese is used to make a cream sauce. The broccoli and ham are already cooked. Actually the broccoli is frozen broccoli that I just cooked for the minimum amount of time on the package.
Making Low Carb Broccoli & Ham Casserole
If you are using frozen broccoli, cook it in the microwave and get the cream sauce going. Add the cauliflower to a pan and just cover with water. Bring to a boil and simmer until the cauliflower is fork tender.
Drain the cauliflower but save the water. Then place it in a high speed blender (I love my Vitamix for this) with the cream cheese and 1/2 cup of cheddar cheese. If it’s too thick add a bit of the saved water to get it to a thick cream sauce consistency.
Place the cooked ham and broccoli into a baking pan and mix with the cream sauce. Then sprinkle the remaining cheddar cheese on top and pop it in the oven for 20 minutes. This recipe made 4 servings for me but if you want you could add more broccoli or ham though remember the carbs count will change.
Can You Freeze This Low Carb Casserole?
Yes I cooked it and froze portions for my lunch. If you want to do something like this make sure to bake it first.
If you want to make the whole casserole for dinner some day, you can freeze it prepared but it will take more time to cook. I suggest thawing before baking.

Low Carb Broccoli & Ham Casserole
This low carb broccoli & ham casserole is an easy and delicious recipe to make with leftover ham. Only 5 ingredients needed to make this tasty low carb casserole and each serving has 5.4g net carbs.
Ingredients
- 8 oz ham, cooked and diced
- 10 oz broccoli, cooked
- 2 cup cauliflower florets
- 1 oz cream cheese
- 1 1/4 cup cheddar (divided into 1/2c and 3/4c)
Instructions

Preheat oven to 400 degrees F.

Add cauliflower florets to a small sauce pan and add water until it's just covering the cauliflower. Cook until fork tender then drain the water but keep it as you might need it for the cream sauce.

Add the cooked cauliflower, cream cheese and 1/2 cup of cheddar to a high speed blender and blend until smooth and creamy. If it's too thick add a little of the reserved water.

Add the ham and broccoli to a baking pan then mix it with the cream sauce. Top with the remaining cheddar cheese. Bake for 20 minutes.
