My husband and I love buffalo flavored things. Ironically I have never made nor eaten buffalo wings but I think I’ve tried everything else! Today I was craving that spicy, tangy sauce and decided to make this low carb buffalo cauliflower rice with chicken. It only takes about 15 minutes and you have this very flavorful one pot meal. Best of all each serving is just 3.7g net carbs and you can freeze the leftovers!

As I mentioned I love buffalo sauce flavored dishes and buffalo sauce is essentially very low carb so why not! A few of my favorite buffalo sauce recipes are:

Two Low Carb Meal Prep Ideas
Two things I often have on hand are cubed, cooked chicken breast and cauliflower rice. If you have both of these items in your freezer you can throw together lots of low carb meals like this one.
- For the chicken I usually buy a rotisserie chicken, take off all the meat and freeze it, and then make bone broth with the bones. Costcos has rotisserie chickens for only $5 and they are fairly large. The other thing I do is make a batch of cubed chicken in my Instant Pot. This makes a big batch and takes little time.
- Cauliflower rice is so easy to make. I but a big head and chop it up in a food processor until it’s rice-like. Store in the refrigerator or freeze for later. I never cook this first, just freeze raw.
Low Carb Buffalo Cauliflower Rice Recipe
As I mentioned this take little time to throw together and it’s so tasty! First you add the butter and garlic to a large saute pan. Let the butter melt and the garlic get fragrant for a minute or two. Then add in the hot sauce and whisk together.
Next take the raw cauliflower and cooked chicken and mix together with the sauce. Cover and cook for 5 minutes. Lastly take off the stove, sprinkle cheddar cheese over the top and stick under the broiler until the cheese is melt. That’s it!
Above you can see what it looks like when it comes out of the oven. Below you can see I like to add blue cheese crumbles on top. I didn’t include that in the recipe because I know not everyone likes blue cheese but if you do, I recommend just sprinkling it on top at the end.
I hope you like this simple low carb dinner as much as we do. There is a little in the freezer and I can’t wait to eat it for lunch today! The nutritional information for 1 serving is:

Ingredients
- 2 cups cauliflower rice, raw
- 1 cup chicken, cooked and chopped
- 4 tablespoons butter
- 2 cloves garlic, crushed
- ½ cup hot sauce
- ½ cup cheddar, shredded
Instructions

Add the butter and garlic to a large saute pan. Once the butter melts and the garlic fragrant add in the hot sauce.

Whisk everything then add in the raw cauliflower and cooked chicken. Mix it well and then cover with a lid.

Cook for 5 minutes and then take off the stove and sprinkle cheese on top.

Broil unit the cheese is melted and then it's ready to eat!
