I love, love, love classic buffalo chicken dip but I only make it for parties. And of course we are not going to any parties right now so I tried making a few small batches that I could munch on or freeze for later.
All of a sudden my son loves this dip and it went really fast – even the frozen batches – so I’ve made this tasty dip recipe many times these last few weeks. I finally showed him how to make it so he can make it whenever he wants.
Besides the taste, I love these microwave mini cups of keto buffalo chicken dip because they hav just 2 grams carbs and 30.6 grams of protein. I eat it with celery sticks and it’s just a yummy keto snack for me. And the small portions keep me from over eating.
And it’s easy to double or triple the batch of this low carb appetizer recipe and bring it to a party. I’ve used it to stuff mushrooms, chiles, quesadillas, and even make a cheeseball and buffalo chicken salad with variations on this recipe.
Recipe ingredients and substitutions.
I make my buffalo chicken dip in many ways but this is my go to recipe. So the simple ingredients I used for this recipe were canned chicken breast, hot sauce, cheddar cheese, cream cheese, mayonnaise and fresh garlic cloves.
Cans of Chicken
If I have chopped or shredded rotisserie chicken in my freezer (which I often do for recipes like this) I will use that in this recipe. However today I used canned chicken breast. You can also use leftover chicken from a meal and it can be white or dark meat though I prefer white meat cooked chicken.
Cheddar and Cream Cheeses
I like shredded cheddar cheese though you could use a Mexican blend in a pinch. I would not use mozzarella shredded cheese as that doesn’t have much flavor. And there really isn’t a substitution for the cream cheese. It’s necessary to thick and add creaminess.
Hot Sauce
I used Aldi brand hot sauce but you can use Frank’s red hot as they are basically the same thing. You could also use tabasco but it’s a bit more vinegary. Any spicy buffalo sauce will work in this recipe.
Fresh Garlic
You can use minced garlic in the jar in this recipe but I would not use garlic powder. The fresh garlic adds to the flavor. If you really want to use garlic powder the rule of thumb is ¼ teaspoon garlic powder equals 1 clove of garlic.
How to make small batch keto buffalo chicken dip.
NOTE: This recipe makes 2 one person servings of dip. If you want you can double or triple this recipe to make a large bowl for parties or more people. To do this just spoon it into a microwave safe baking dish and it will probably take at least 5 minutes to cook in the microwave.
Step 1: Get out a medium-sized mixing bowl. Try to use softened cream cheese. If it’s really cold cream cheese right out of the refrigerator, microwave it for a 10 seconds or so until it has softened. But don’t cook it too much!
Step 2: Put the softened cream cheese in the bowl and then mix it together with the chicken chunks. If using canned make sure to drain all the excess liquid first. I use a big serving fork to cream the cheese and chicken together.
Step 3: Add the rest of the ingredients to the cheese mixture and mix well to combine. Then spoon the mixture into microwave safe ramekins or small bowls. If you are only making one, you can cover and store the other in the refrigerator.
You can use ramekins or I like these glass custard cups that I bought. They came with lids and they work in the oven too! I used them for my individual baked omelet cups.
Step 4: Place one of them in the microwave and cook for 2-5 minutes. Make sure to keep an eye on them. As the dip cooks it gets that crusty bit around the edges that I just love (see pic below)
However if you microwave it too long the whole thing will turn into a puck. So start at 2 minutes and go from there. And if you don’t like the crispy bits around the edges just take it out sooner or mix it half way through.
Once it’s to your liking, take it out and let cool a bit before serving with celery for dipping. Store any leftover buffalo chicken dip in an airtight container if there are any. Since this is meant for 1 person you will probably eat the whole serving.

What to serve with this keto dip?
I think celery is the perfect vehicle for transporting buffalo chicken dip into your mouth. Other sturdy vegetables would also be good. Sometimes I like to cut my veggies into coins like in this post when serving keto dips. It makes them easier to eat dip with.
You can also use a low carb cracker or keto tortilla chips. You can find a lot of good low carb or keto friendly products in Aldi and Amazon! Pork rinds are also a great option.
These custard cups are great for cooking in the oven and they come with lids. I also use them for meal prep or just little snacking dishes.

Ingredients
- 1 cup canned chicken breast
- ½ cup cheddar cheese
- ¼ cup mayonnaise
- 1 cloves garlic, crushed
- ¼ cup hot sauce
- 2 ounces cream cheese, softened
Instructions
- Get out a medium mixing bowl and add the softened cream cheese and canned chicken. Make sure to drain the juices from the can first. If you cream cheese is not soft enough to mix, you can microwave for about 5-10 seconds to soften it up a bit.
- Using a large fork, mix the chicken into the cream cheese as best you can. Then add the rest of the ingredients and mix well combine everything.
- Spoon into 2 microwaveable ramekins or small bowls. If you want you can spray with nonstick cooking spray first. This recipe makes 2 individual bowls. You can freeze one or save it for the next day. Or you can make this into one big serving or double the recipe for a big batch to take to a party.
- To cook, place one in the microwave safe bowls for 2-5 minutes. Make sure to watch it as the edges will start to brown and if you let it go too long they will burn and get hard. I like the crispy bit but if you do not, mix it half way and keep an eye on it and take it out when any time after 2 minutes.
- Serve with celery sticks or other raw vegetables. Or try low carb chips and crackers. Store leftover dip in an airtight container if there is any.
