What’s In This Keto Buffalo Chicken Dip?
I make my buffalo chicken dip in many ways. Today I went with the same recipe I used in my buffalo chicken stuffed mushrooms. I used to use canned chicken but I found that rotisserie chicken tastes better and has less carbs. That’s why I buy rotisserie chicken, clean off the meat and freeze it for recipes like this.
So the ingredients I used were cooked rotisserie chicken, hot sauce, cheddar cheese, cream cheese, mayonnaise and garlic. If you want you could use canned chicken and you can also adjust the amount of hot sauce you use.
Let’s Make This Microwave Chicken Dip!
First thing you do is put everything into a big bowl. It’s easier to mix if the cream cheese is soft but it doesn’t matter too much if it isn’t. Mix well and the spoon into two microwaveable bowls.
You can use ramekins or I like these glass custard cups that I bought. They came with lids and they work in the oven too! I used them for my individual baked omelet cups.
Bake for just 2-5 minutes in the microwave. I would keep an eye on the time here. As the dip cooks it gets that crusty bit around the edges that I just love. However if you microwave it too long the whole thing will turn into a puck. So start at 2 minutes and go from there.
What To Serve With This Keto Dip?
I think celery is the perfect vehicle for transporting buffalo chicken dip into your mouth. Other raw vegetables would also be good. Sometimes I like to cut my veggies into coins like in this post when serving keto dip. It makes them easier to eat dip with.
