Now that the weather is getting warmer we are anxious to have friends and family over this summer. It may be wishful thinking but we are keeping our fingers crossed. If you are planning to have a brunch or even afternoon cocktails by the pool this summer you will love this low carb brunch platter and the keto Arnold Palmer cocktail to go with it.
The platter is full of delicious foods to pick from and all are low carb finger foods. Even if you don’t have a brunch this platter is great for a weekend summer lunch!
What Is A Keto Arnold Palmer Cocktail?
In case you have never heard of an Arnold Palmer, it’s a drink that is half iced tea and half lemonade. It’s thought to be the invention of the famous pro golfer Arnold Palmer. And since Arnold Palmer is from a city very near to my own, it’s a well known drink around here.
To make my tea cocktail I made tea with a Tupperware cold brew carafe and gave it that delicious lemonade flavor with Torani Sugar Free Lemon Syrup. I also spiked it with a little citron vodka. However with or without alcohol it is a great party pleasing drink that just happens to be sugar free!
Without alcohol this keto drink has 0 calories and 0 carbs. With alcohol it still has 0 carbs but some calories from the vodka. So I would say this is a great keto drink to make!
3 Low Carb Brunch Platter Ideas
There are so many things you can put on a low carb brunch platter. For my brunch I assembled 3 platters and I’ll describe them below. You can pick and choose from these foods to make your own keto brunch platter.
Platter No. 1 – Low Carb Crackers, Cheeses, Lox and Veggies
Above is the biggest platter that I put together. I used the following:
- smoked salmon with thin sliced red onions, capers and lemon wedges (you could also add some cream cheese)
- an assortment of fancy cheeses along with low carb crackers (Mary’s Gone Crackers) and low carb melba toasts (Carbolicious) which can be used with the cheeses and the salmon
- green goddess dip and low carb vegetables cut into coins for easy dipping
Platter No. 2 – Eggs, Meats, Olives And Pickles
This was a smaller platter and below is what I used. However I have even more ideas for your platter.
- fried kielbasa slices
- bacon chips – learn how to make bacon chips here
- kalamata and green olives
- pickled spring vegetables – used this quick pickle recipe but with asparagus, green beans, radishes, peppers and carrots
- hard boiled egg slices
Other ideas to for this platter
- smoked turkey or a spiral ham slices
- deviled eggs
- smoked salmon cheese spread
- herbed goat cheese and bacon cheese ball
- homemade almond crackers or low carb crispbreads
Platter No. 3 – Berries And Whipped Cream
This was just a little platter to add some sweetness. I used fresh berries which are the lowest carb fruits and I had some whipped cream to accompany them. Here are some other sweet ideas to try.
- keto chocolate covered strawberry slices
- sweet keto chaffles with strawberries and cream
- mini low carb chocolate muffins or pumpkin muffins
- pumpkin cheesecake dip
- chocolate zucchini bread slices
Now Let’s Make A Keto Arnold Palmer Cocktail
I received two very cool items from Tupperware for my keto brunch. Below you can see the cold brew carafe for both tea and coffee. I used some loose leaf tea and made my tea the night before.
The next day I used the cool quick shake® container and mixed my cold brew tea, Torani sugar free lemon syrup, citron vodka and a little water. It’s a simple drink but oh so good. I’ve been drinking it all week (without the alcohol of course) in the afternoon for a pick me up.

Keto Arnold Palmer Cocktail
Light and refreshing, this keto cocktail is a mixture of tea and lemonade flavors and it's sugar free!
Ingredients
- 8 oz brewed black tea
- 2 oz Torani sugar free lemon syrup
- 2 oz lemon flavored vodka (can use regular too)
- 4 oz water
- lemon juice (optional)
Instructions

Brew the tea over night if using the cold brew Tupperware container. Otherwise make your tea and bring to room temperature.

Mix everything except the lemon juice in the shaker bottle. Take a taste. If you like it with a bit of bite, add a little lemon juice. However this might take away from the tea flavor.

Adjust the sweetness and alcohol according to your tastes.Â
