Recently I had a family party for my son’s birthday and decided to use this opportunity to make a few low carb appetizers like the pumpkin cheesecake dip with bacon chips and this bacon herb goat cheese ball.
Both were very easy to make and no one would know they were for low carb dieters. This party cheese ball appetizer only took 10 minutes to make and was really delicious with the garlic and herb creamy filling rolled in salty bacon and crunchy pecans. This would be an easy appetizer for the holiday season.
I served them with just cucumber slices and crackers for everyone else. I used low carb crackers which were yummy to me but you don’t care about carbs feel free to serve it with your favorite crackers.
Recipe ingredients I used.
All you need to make this super easy appetizer are a few simple ingredients – goat cheese, plain cream cheese, fresh herbs, garlic, bacon and pecans. Note if you don’t like the tangy flavor of goat cheese you could also use blue cheese or even feta cheese.
For the herbs you can use any combination that you like. Choose any herbs such as fresh parsley, basil, thyme, rosemary, chives, cilantro or even green onions. I used basil, chives, thyme and rosemary because they came in a multi pack at the grocery store. You can even just use one herb if you want.
Also I used pecans but you could also use walnut or some other nuts if you like but pecans are nice and crunchy so to me they work the best.
How to make a bacon goat cheese ball.
Step 1: Get out a medium bowl and add the cheeses, crushed garlic and fresh herbs. Use a fork to mix it well. Note you could also use a food processor or hand mixer but that is just more mess in my opinion.
Step 2: Using a spoon, form the goat cheese mixture into a ball in the bowl. The scoop the cheese ball onto a piece of plastic wrap. You can use this to better form into a ball without getting your hands dirty.
Step 3: Get out a shallow bowl and place the chopped pecans and bacon crumbs in it and mix well. Drop the cheese ball mixture out of the plastic wrap in to the nut mixture and roll around to coat the whole thing in nuts and bacon.
Step 4: If you are going to serve this later or even the next day, you can wrap the finished cheese ball in plastic wrap and refrigerate until ready to eat. Make sure to let it come to room temperature before serving though.

Otherwise place on a platter and serve with raw veggies like cucumber slices or celery sticks. Or use low carb crackers like Mary’s Gone Crackers which are low carb.
I buy a big box at Costco for when I want a cracker with my cheese. They have 1.4g net carbs per cracker. You can also use any crackers you want if you don’t care about carbs.

This bacon herb goat cheese ball takes only a few minutes to make and is the perfect low carb holiday appetizer to take to a party and you can make it in advance. Serve with cucumber slices or low carb crackers.
Ingredients
- 8 ounces cream cheese, softened
- 4 ounces goat cheese, crumbled
- 2 tablespoons minced herbs, (I used basil, chives, thyme & rosemary)*
- 1 clove garlic, crushed
- 2 pieces of bacon, cooked and crumbed
- ½ cup of pecan, chopped finely
Instructions
- In a medium mixing bowl add the cheeses, garlic and herbs and mix well with a fork or mixing spoon. Note you could also use a food processor or hand mixer but that is more mess than it's worth in my opinion.
- Using a spoon, for the goat cheese mixture into a ball in the bowl. The scoop the ball onto a piece of plastic wrap. You can use this to better form into a ball without getting your hands dirty.
- Add the crumbled bacon and chopped pecans to a bowl larger than then cheeseball and mix well.
- Put the cheeseball into the bacon pecan mixture and roll around until it's covered in nuts and bacon.
- Place plastic wrap over the cheese ball and refrigerate until ready to use. Make sure to let it come to room temperature before serving though.
- Serve with cucumbers or low carb crackers. Store leftovers in an airtight container and refrigerate.

*Choose what ever fresh herbs you want to use such as parsley, basil, thyme, rosemary, chives, cilantro, etc.
