We have been eating a lot of salmon this summer and I find that salads are one of the best ways to use leftovers. Today I made for you a goat cheese and salmon salad with a sugar free raspberry vinaigrette with leftover salmon.
It’s light but filling and fully of tasty ingredients like goat cheese, roasted pepita (pumpkin kernel) seeds, sweet peppers, basil and topped with a tangy and sweet raspberry vinaigrette. The dressing has only 0.1g net carbs per tablespoon and the salad has 3.6g net carbs so it’s a tasty keto summer dinner.
Ingredients I Used In This Salmon Salad
For this salad I used a base of romaine lettuce, red onions, sweet peppers and basil. All of these ingredients pictured below I found at Aldi. Except I changed the mozzarella pearls for goat cheese.
I was originally going to for a raspberry caprese salad with salmon because I found these great mozzarella pearls at Aldi but they also had these cool goat cheese crumbled bits and felt they would have more taste than the mozzarella.
If you don’t like goat cheese, you can substitute, blue cheese, feta, asiago or even fresh mozzarella.
Making The Sugar Free Raspberry Vinaigrette
I wanted to use fresh raspberries because they are delicious and low in carbs. However I felt this dressing need more raspberry taste so I ended up add some raspberry extract.
Because the raspberries are tart it needed some sweetness so I used Swerve sweetener. If you have any Torani sugar free raspberry syrup, this would be a great sub for both the extract and sweetener.
To make the dressing just add everything to a blender or food processor and whiz until nice and smooth.
Putting It All Together
Since I am using leftover salmon, I didn’t need to cook it. If you need to cook your salmon, this post will show you how to pan fry salmon. Or you can bake the salmon too.
Just chop the vegetables and mix. Sprinkle the chopped basil and goat cheese crumbles and top with a piece of cooked salmon. Lastly spoon over as much dressing as you like. Easy peasy.
Other Low Carb Salad Ingredients To Try
As I mentioned above you can make a lot of different substitutions in this salad. Try these low carb salad ingredients:
- Other seeds like sunflower seeds for the pepitas.
- You can also use nuts instead like pecans, walnuts or slivered almonds.
- I used basil but cilantro, parsley or mint would all be good here.
- For the cheese try fresh mozzarella, blue cheese, feta, asiago, sharp cheddar, etc.
- Lastly use whatever vegetables and lettuce you like. I find thinly sliced red onion and sweet peppers always add a nice touch and lots of color. Radishes are also quite good and low carb.

Low Carb Goat Cheese & Salmon Salad with Raspberry Vinaigrette
This low carb goat cheese and salmon salad is great for a low carb summer salad using leftover salmon. The sugar free raspberry vinaigrette is sweet yet tart and tastes great with the goat cheese and salmon.
Ingredients
- 4 cup romaine lettuce, chopped
- ¼ cup sliced sweet peppers
- ¼ cup thinly sliced red onions
- 2 tablespoons roasted pepita seeds
- ¼ cup goat cheese, crumbled
- 2 tablespoons basil leaves, chopped
- 2 (3 oz) salmon filets, cooked
Raspberry Vinaigrette
- ¼ cup fresh raspberries
- ½ olive oil
- ¼ cup apple cider vinegar
- ½ teaspoon raspberry extract
- 2 teaspoons Swerve sweetener
- ¼ teaspoon salt
- â…› teaspoon pepper
Instructions
- Chop the vegetables and lettuce and place in two big bowls.
- Sprinkle the goat cheese and chopped basil and then top with the cooked salmon filets.
- In a food processor add all of the ingredients for raspberry vinaigrette. Pulse until well combined.
- Spoon over the salmon salad.
