Easy Baked Salmon & Asparagus Recipe
This is really simple. First added foil to cover a large sheet pan and spray it with cooking spray. It has to fit your piece of salmon. I bought mine at Aldi and it was about 2.3lbs.
Then lay your salmon and asparagus on the sheet pan. Spray again with cooking spray and sprinkle a generous amount of salt and pepper.
I also added a sliced lemon on top because I LOVE lemon. Bake in a 400°F oven for 20 minutes. Done!
Spoon some of the sauce over the salmon or just serve it on the side. I also sprinkled some parsley for color but that is not necessary.
Low Carb Lemon Asiago Sauce For Salmon
You can make this sauce quickly while the salmon is baking. In a small sauce pan, add the butter and garlic. Let it cook for a minute or so until the garlic is fragrant. Then add in the lemon juice and mix well. Lastly add in the cream and Asiago cheese and mix until the cheese melts. This should only take a few minutes.
Pour over the fish or just serve along side the salmon. As I mentioned above, it goes great with both the salmon and asparagus.
Well I hope you give this one a try. Honestly the simplicity of the baked salmon and asparagus would have been fine with me but the sauce makes it a bit more special. This is a very low carb dinner as you can see from the nutritional information below. Enjoy!
