You know I can’t get enough of buffalo chicken anything. Last week I made a microwave buffalo chicken dip and this week I made this keto buffalo chicken cheese ball! It’s super easy and tasty and perfect for parties and get togethers.
Of course we didn’t get together with anyone when my hubby and I made this so we just ate it for lunch. And with the leftovers we stuffed some poblano peppers and baked them in the air fryer. They were delicious too!
Other than being an easy and tasty low carb appetizer, this buffalo cheese ball has very little carbs with just 0.4g net carbs in a tablespoon. The whole cheeseball has less than 10g net carbs! And it is high protein with a whopping 4.6 grams of protein per tablespoon.
Recipe ingredients and substitutions.
For this cheeseball I used cooked chopped chicken, cream cheese, cheddar cheese, jalapeno, chives and bacon.
Cooked Chopped Chicken
I used chopped up rotisserie chicken for this recipe. I usually have some in my freezer for recipes like this. However you can use leftover chicken or even canned chicken. Just make sure to drain all the excess liquid from the can.
Hot Sauce & Jalapeno Pepper
I used a buffalo hot sauce from Aldi but you can use any brand you want. You can use wing sauce as well. And I used the jalapeno pepper primarily for flavor and not heat because of the hot sauce. For that reason I made sure to clean out the seeds and ribs of the pepper which is where it the heat comes from. You could eliminate that if you don’t have any.
Chives
To be honest I would have preferred to use green onions but I only had chives at home and I ended up liking it! So you can substitute a green onion finely chopped for the chives if you wish. Both with have similar flavor.
Bacon
You don’t have to use bacon to cover the cheeseball if you don’t like bacon (but who doesn’t like bacon right?). You could just eat it as is or cover it with chopped nuts like walnuts or pecans. If using bacon you can use any kind you want, including precooked bacon if that is all you have.
Cream Cheese and Cheddar Cheese
The cream cheese is what keeps this cheeseball together so it is necessary and I use full fat cream cheese but if you prefer low fat that will work too. However you don’t have to use whipped cream cheese as it might not be thick enough to keep the cheeseball together. And I think cheddar cheese goes best with this recipe but you could use a Mexican cheese blend or Monterey Pepper jack if you want.
How to make a keto buffalo chicken cheese ball.
Step 1: Make you bacon any way you want. I usually use a microwave bacon tray and make it in the microwave. Once that is done, let it cool and chop into small pieces and set aside.
Step 2: Start with the softened cream cheese and cooked chicken pieces in a large mixing bowl. Use a big fork and to mix the softened cream cheese with the chicken chunks.
Once that is mixed together fairly well, add the shredded cheddar cheese, hot sauce, finely chop the chives (or green onion) and jalapeno. Make sure to clean out the seeds and ribs of the jalapeno because we don’t want added heat just that green pepper flavor.
Mix everything as well as you can. It should look like the bowl below.
Step 3: For this next part I used to use my hands and formed the mixture into a big ball but it’s very messy. So now I scoop the mixture onto a piece of plastic wrap and mold it into a ball. See below what it looks like.
Step 4: Next add the bacon bits or crumbles and put them in a bowl. Place the cheese ball in the bowl and follow around in the bacon bit coating. You might have to use your hands to make it stick to the cheese.
Step 5: Place on a plate and refrigerate until ready to eat. Serve this cheeseball with low carb crackers (like Mary’s Gone Crackers) or with raw vegetables like celery sticks. You need something pretty sturdy to scoop up the cheese mixture.

Keto Buffalo Chicken Cheese Ball Recipe
This keto buffalo chicken cheese ball is covered in bacon and absolutely delicious! Perfect for a party or just for a keto snack, this cheese ball is great on low carb crackers or with raw veggies. You put it together in a about 10 minutes and 1 tablespoon has only 0.4g net carbs and 4.6 grams of protein.
Ingredients
- 8 ounces cream cheese, softened
- 1 teaspoon chives (or 1 green onion), finely chopped
- 1 jalapeno, finely chopped (seeds and ribs removed)
- 1 ½ cup cooked chopped chicken (or canned chicken)
- 5 pieces bacon, cooked and crumbled
- 4 tablespoons hot sauce
- ½ cup shredded cheddar cheese
Instructions
- Make the bacon anyway you want. Once nice and crispy, let cool then crumble into bacon bits. Pour them into a bowl and set aside.
- Clean the jalapeno pepper by cleaning out the seeds and ribs to take out the heat. Finely chop the jalapeno and chives (or green onion if using).
- Get out a large mixing bowl and add the softened cream cheese and cooked chopped chicken. Use a large fork and mix the chicken into the softened cream cheese as best as you can.
- Then add the cheddar cheese, hot sauce, jalapeno and chives. Mix well so everything is incorporated.
- Get out a large piece of plastic wrap and scoop the cheese mixture onto it. Wrap up and form into a cheese ball. You an also use your hands but it's messy.
- Put the ball into the bowl with the bacon bits and roll it around to coat the whole ball with bacon.
- Refrigerate until ready to eat. Serve with low carb crackers or celery sticks and raw veggies. Store leftovers in an airtight container.
