This asparagus & green goddess dip is a delicious low carb snack. It also makes a great appetizer for your next party. Only 0.8g net carbs per serving of dip and 3.8g net carbs for 12 spears of asparagus!
I love veggies and dip. Not because it’s relatively healthy but because I love the crunch and color of raw vegetables dipped into a creamy and flavorful dip. Today I made this asparagus & green goddess dip because I was craving asparagus and and thought it would be good with dip. I remember my mom making green goddess dressing as a kid and just loved it. My husband was on a business dip and I ended up eating this for dinner one day!
The asparagus are simple to make. I just steamed them for a few minutes because I wanted them cooked but not soggy. I could have gone a step further and blanched them but I didn’t. The green goddess dip is very simple as well. Take a bunch of fresh herbs, garlic, anchovy paste, mayo, sour cream, lemon juice and cream cheese and give it a whirl in the food processor or blender. This recipe makes a lot of dip so if you don’t want or need that much, cut the recipe in half.
I used the cream cheese to thicken it up a bit but if you want to make this more of a dressing keep it out. This would be a pretty dish to serve at a spring party. I’ve often carved a bowl out of a purple head of cabbage and put dip in it. Then you can just display the asparagus spears around it. Another pretty dip for a party is this lemony beet hummus. I love bright pink color of that dish too.

for 12 steamed asparagus
40 cals / 0.4g fat / 7.4g carbs / 3.6g fiber / 4.3g protein = 3.8g net carbs
Asparagus & Green Goddess Dip (low carb snack)
Ingredients
- ½ cup parsley fresh
- 2 cloves of garlic
- 2 teaspoons anchovy paste
- ¼ cup of chives fresh
- ¼ cup basil fresh
- 1 tablespoon of tarragon fresh
- 2 tablespoons of cream cheese
- 2 tablespoons of lemon juice
- ½ cup mayonnaise
- ½ cup of sour cream
- 1 lb asparagus steamed.
Instructions

Add your herbs and garlic to a food processor and pulse until minced well.

Add in the rest of the ingredients and process until mix well and creamy.

You can steam the asparagus for 4 minutes in the microwave or add to boiling water for a few minutes. You want them cooked but not soggy, and crunchy.

This recipes makes roughly 24 tablespoons of dip.
