These keto buffalo chicken quesadillas make a tasty and easy appetizer for parties and get togethers. They are filled with creamy, cheesy buffalo dip and using keto tortillas to create a tasty snack or even a quick meal. This recipe make 32 pieces and each has 0.2 grams net carbs.

Recently I pulled a bag of my favorite keto tortillas out of the freezer and so many leftover that I wanted to use them up. So I came up with this super easy keto buffalo chicken quesadillas appetizer.
I used my keto buffalo chicken dip recipe to fill these mini tortillas. Then I cooked them in my mini dash griddle though you can make them in a pan too. It took very little time and they were SO good!
My family woofed them down for a weeknight dinner as I really didn’t have a party to go to but I will definitely be making them for the next get together. So if you love buffalo chicken dip and are on a low carb diet, you will love these delicious quesadillas.
Recipe ingredients I used and substitutions.
The simple ingredients I used for this recipe are canned chicken, mayonnaise, cream cheese, shredded cheddar cheese, hot sauce, garlic and keto tortillas.
Canned Chicken
I find that buffalo chicken dip works well with canned chicken and it is something that I have in the pantry all the time. My family loves buffalo chicken dip and it’s pretty low carb so I make it often. You can also use leftover chicken breasts or leftover rotisserie chicken.
Mayonnaise, Cheddar Cheese and Cream Cheese
These are all staples in the dip. You don’t want to use Miracle Whip or any type of sweet mayo and the cream cheese keeps it thick. The cheddar cheese flavor goes best with buffalo sauce so I wouldn’t substitute any of these ingredients. But you could use other types of cheese like mozzarella cheese or pepper jack cheese if you don’t have any cheddar.
Garlic and Hot Sauce
I like fresh garlic in this recipe but in a pinch you can use garlic powder. If you have just remember 1 clove of garlic is equal to ¼ teaspoon of garlic powder. As for the buffalo hot sauce you can use any brand of buffalo sauce or wing sauce you want. I usually shop at Aldi and buy their brand.
Keto Tortillas
The main reason I made these is because I had a bag of these La Banderita Keto flour tortillas. They taste just like regular tortillas and are the best brand in my opinion. Plus they have zero net carbs.
You can use any brand of low carb tortilla. And if you are not on a keto diet you can use whatever type of tortilla you want or even corn tortillas.
This size is a street taco size and works perfectly to make mini quesadillas. If you want to use another brand you make have to buy a bigger size but you can cut them up into pieces easily.
How to make keto buffalo chicken quesadillas.
Step 1: Make the buffalo chicken dip buy getting out a large mixing bowl. Drain all of the liquid out of the canned chicken and place in the bowl. Break up the chicken with fork to make mixing easier.
Step 2: Add the softened cream cheese and mix well with the shredded chicken first. Then add the rest of the ingredients to the chicken cheese mixture and mix well with the fork to make sure everything is well combined.
Step 3: Get out your tortillas and place some of the chicken mixture on top of one tortilla and cover with another. You want enough dip to cover the tortilla but you don’t want too much so that it spills out of the sides and makes a mess.
Step 4: I used my Dash mini flat griddle because it’s the perfect size for my mini quesadillas. However you can make them in a pan as well. For either method, spray the pan or grill with nonstick cooking spray and then spray the tops of the assembled quesadillas.
Step 5: Flip the sprayed side into the heated griddle and spray the top of the tortilla that didn’t get sprayed yet. Close the lid on the griddle and let cook for a few minutes then open up and flip over to do the other side.
If use a large skillet spray with nonstick spray and heat to medium heat. Place them in the hot skillet and cook for 3-4 minutes then flip and cook for a few minutes more to make sure they are brown on both sides. Note you an also use olive oil instead of nonstick spray if you want.Â
Step 6: When they are golden brown on both sides place on a plate or platter and let cool before cutting into bite size pieces for appetizers. Of course you can eat these whole as well as for a fun meal or delicious dinner.
Store leftover keto quesadillas in an airtight container or cover with plastic wrap and store in the refrigerator. You can reheat in the microwave, or in the oven or on the stove to get them crispy again.

Some different dipping sauce options to serve with this dish are creamy ranch dressing, blue cheese dressing, hot sauce, salsa or sour cream. You can also garnish with a drizzle of crema like this or an aioli sauce on top.
Some fresh cilantro leaves or chopped green onions would have made a nice garnish that would add color and go well with the buffalo dip flavor. However I didn’t have any on hand.
This makes a lot of appetizers so you might want to cut the buffalo chicken mixture in half and use less tortillas if you are making these for a meal. Or make the whole batch of dip and freeze half for another day to eat as a dip. It freezes really well. Just thaw and cook for 5 minutes or more in the microwave to eat it as a dip.

Keto Buffalo Chicken Quesadillas Recipe
These keto buffalo chicken quesadillas recipe is great as a low carb appetizer or just eat them for a quick lunch or dinner. Easy to make and full of flavor with creamy buffalo dip.
Ingredients
- 1 cup chicken, cooked (can use canned)
- ½ cup cheddar cheese, shredded
- ¼ cup mayonnaise
- 1 clove garlic, crushed
- ¼ cup hot sauce
- 3 ounces cream cheese, softened
- 16 mini low carb flour tortillas (street taco size)
Instructions
- Get out a large bowl and add the chicken and softened cream cheese. Use a fork and mix both together to combine.
- Add the mayonnaise, cheddar cheese, crushed garlic and buffalo hot sauce to the bowl and mix together to make the buffalo chicken filling or dip.
- Get out a large skillet and heat to medium heat. Spray with nonstick cooking spray or you can also use a little olive oil.
- Lay a mini tortilla on a plate and spread some of the buffalo chicken filling on top. Then add another tortilla on top. Continue with the other tortillas and place all 8 on a plate. Spray the tops with cooking spray.
- Place 2-3 quesadillas in the hot skillet with the sprayed side down. Fit as many as you can in the pan but don't crowd them. You will probbaly have to do 2-3 batches.
- Spray the tops with cooking spray and cook for a few minutes until lightly browned. Flip and cook the other side for a few minutes. Take out of the pan and repeat with the other quesadillas.
- Let cool a bit and cut into fourths if making as an appetizer or just eat as is for a meal. Store leftovers in an airtight container or cover with plastic wrap. The buffalo dip also freezes well if you have leftovers.
