This is a quick recipe post for you today. My husband’s jalapeno plants are about to go crazy soon and I was in the mood for some cheese stuffed jalapeños. We used to make them on the grill but I got to thinking that I could make them in the Air Fryer.
So I made this keto bacon wrapped jalapeños in the Air Fryer and they only took 10 minutes. They were so tasty I will be making them all summer!
Preparing These Keto Bacon Wrapped Jalapeños
First of all you want to cut and clean out the jalapeños. Cut off the stem and then clean out the seeds and ribs with a small paring knife. If you use your hands, you might want to use gloves so you don’t get the burning effects of the seeds and ribs.
Next cut the cheese sticks in half and stuff into your peppers. If the cheese sticks out a bit, cut it so it’s flush with the top of the pepper. If you have excess room in the pepper add more cheese like above. This will all depend on how big your peppers are.
What Kind Of Bacon To Use
I like to use a center cut, thinner piece of bacon. You start with the end of the bacon and wrap it over the top of the pepper. Then wrap it around the pepper overlapping a bit as you go. You can then try to form the bacon to the pepper. It will somewhat stick more when you squeeze it together. You want the bacon cover the cheese so it won’t ooze out.
Set into the Air Fryer basket with the seam side of the bacon down. Then cook at 400°F for about 10 minutes. If you would like your bacon more crispy stick it in for a few more minutes. The pepper should be cooked well and the cheese will be melted.
Eat them immediately as you want the cheese to be melted and the bacon crispy. I only made 6 of these because I was just trying them out but you could fit a few more in the basket. And since it doesn’t take much time you can do them in a few batches.
If You Don’t Have An Air Fryer
If you don’t have an Air Fryer you can always make these in the oven. Check out my husband’s jalapeno recipe here for how to do it.
But essentially you want to blanch the peppers, then stuff them with cheese and wrap with bacon.
Bake them for 15-20 minutes in the oven. Check to see if the bacon is to you liking and if it’s not crispy enough cook longer.
The old air fryer I had used was a XL Air Fryer by Cozyna (5.8qt). It wasn’t very expensive but it did have a large basket which is necessary to roast a turkey breast or chicken.
My new air fryer is a Chefman 6.3 qt digital air fryer. You can use it to dehydrate and it has a rotisserie spit! However I really like that it has a window so you can see your food as it’s cooking.
More Low Carb Stuffed Pepper Appetizers
In the summer we love to stuff different types of peppers from the garden. In each of the below recipes you can use whatever type of peppers you want. You can even use bell peppers with the various low carb stuffing.
I hope you enjoy these as much as we do. I see me and my husband eating many of these with his fresh jalapeños from the garden. The nutritional information for 1 pepper is:

Ingredients
- 6 jalapenos, stem, seeds and ribs cleaned out
- 3 mozzarella cheese sticks
- 6 pieces bacon, thin cut
Instructions
-
Take your jalapenos and cut off the tops. Use a knife to clean out the seeds and ribs. These contain the heat of the pepper.
-
Cut the cheese sticks in half and stuff into the jalaepnos. You might have excess cheese sticking out. If so cut it so it's flush with the top of the pepper. You can try to cut it and stuff into the side if you wish.
-
Take a piece of bacon and at the end, cover the whole side of the pepper. Then carefully wrap around the pepper. You can try to mold the bacon around the pepper by squeezing with your hands. The bacon should stick together.
-
Place seam side down in the Air Fryer basket and cook on 400°F for 10 minutes. If the bacon is not as crispy as you like, try a few more minutes.
-
Serve immediately.

Awesome idea with the string cheese. Have you tried this with smoked mozzarella? If not and you like salami I suggest try cutting in half the Fiorucci brand Paninos! I just subscribed to your weekly recipes! Thank you!

Hi Theresa so glad you liked it! I’ll have to look out for that brand. My husband’s crop of jalapenos are just coming in and we eat this quite a bit in the summer. Thanks for sharing your tips!
