Recently I made some mini taco cups out of cheese. They were so easy to make and the perfect vehicle for any type of taco toppings. Well today I’ve decided to make these low carb keto chicken nachos that you can also make into a chicken taco salad.
We are in the midst of football season and this is a great appetizer or snack to munch on during the game or you can make the salad version for an easy low carb lunch!
Low Carb Appetizers For Football Season
Football is a big deal around here as is hockey so when our teams are in the playoffs or just for a Sunday evening game, it’s good to have a few low carb appetizers to serve. Here are a few of my favorites along with today’s keto chicken nachos of course.

How To Make Keto Cheese Chips
These are the easies things to make. You want to start with a parchment lined cookie sheet or you can use a silicone mat like I have below. Make 1 tablespoon mounds of cheddar cheese and bake for about 8 minutes. You want them to be crispy but not burnt.
Mine were on the verge of being burnt but they tasted fine. If you don’t cook them enough they will be chewy which isn’t bad either. So keep any eye on them.
Once they have cooled they will get a bit crunchier. From there I just added some cooked chicken, chopped tomatoes, green onions and cilantro. I also drizzled some lime crema on top.
You can use any type of nacho toppings you want so experiment but make sure to watch the carbs if you are on a low carb or keto diet. Below you can see how I used half of the cheese for the nachos.
How To Make A Cheese Taco Salad Shell
Now for the other ½ cup of cheese you can evenly spread on a parchment lined cookie sheet. Try to keep it in a circle and the cheese evenly spread. Bake for 10-15 minutes or as long as it takes to get it crispy. Once it’s done, flip a soup bowl over and lay the cheese on top. Mold it into a shell and let it cool completely. When you take it off you will have a bowl!
Lime Crema Recipe
For the crema you only need sour cream, garlic, lime zest and lime juice. I like to use RealLime juice from a bottle because it has less carbs. Mix all of these together and spoon over nachos or salad. Below you can see how the salad looks in the cheese shell taco bowl.
Low Carb Keto Chicken Nachos Recipe
As I mentioned above you don’t have to use these toppings or the crema. You can try taco meat, shredded pork, or even grilled fish. I went for a fresh taco dish but I would also like to make some Barbacoa beef, or zesty garlic pork. I hope you like this as much as we did. The nutritional information for ½ the recipe to make into either nachos or a salad is:
358 cals / 21.4g fat / 3.8g carbs / 1.2g fiber / 36.4g protein = 2.6g net carbs (½ recipe)
And for 1 tablespoon of the lime crema
31 cals / 2.5g fat / 1.1g carbs / 0.5g protein = 1.1g net carbs
Low Carb Keto Chicken Nachos or Taco Salad

Ingredients
- 1 cup cooked chicken breast, chopped
- 1 cup shredded cheddar cheese
- 2 green onions, diced
- ¼ cup grape tomatoes, chopped
Lime Crema
- ½ cup sour cream
- ½ lime zest (zest only)
- 1 tablespoon lime juice
- 1 clove garlic, crushed
Instructions

Note recipe will make two plates of nachos with 8 chips each or two taco salads.

Preheat oven to 350 degree F.
To make the lime crema

In a bowl mix the sour cream, lime juice, garlic and zest. Refrigerate until ready to use.

Line a cookie tray with parchment paper or a silicone mat like this.
To make the nacho chips

Add mounds of cheddar cheese using 1 tablespoon full. to the cookie tray. This recipe will make 16 chips from the 1 cup of cheese. Bake for about 8 minutes or until the cheese gets nice and crispy.
To make the taco salad shells

Add the cheese in 2 large circles on the cookie tray. Bake for 10-12 minutes until the cheese is nice and crispy but not burnt. Take it out of the oven and lay over a soup bowl. Shape into a taco salad shell and let cool. This recipe will make 2 taco salad shells.

When cheese has cooled add the toppings and then spoon a little lime crema on top!
