I love guacamole and I have sincerely never had any that I didn’t like. Sometimes I’ll buy already prepared guacamole and just add in some fresh avocados, garlic and cilantro and I’m good to go. However I just love this low carb chunky Greek guacamole! There is the briny Kalamata olives, salty feta, fresh parsley and more tasty flavors mixed with creamy, chunky avocados. I can eat this by the spoonful!
Now let say thank you to my sister Laurie for this is a Greek version of her most delicious chunky guacamole. Everyone knows of Laurie’s guacamole with the garlic and feta and cilantro. I just took her delicious dish a step further and added olives, parsley and lemon zest. I had a few ingredients leftover from my Greek cauliflower rice bowl I made last week and decided to would go nicely with some avocados.
Low Carb Guacamole Recipe In A Nutshell
- Add feta, tomatoes, olives, chopped avocados and parsley to a large bowl.
- gently mix in lemon juice and zest with the avocado.
- Lastly mix in good olive oil.
- If eating later, tamp down plastic wrap to the surface of the guacamole to prevent browning and refrigerate until ready to use.
Contrary to popular believe the pit of the avocado will only protect guacamole from browning because it’s taking up some of the surface area. That’s why you want plastic wrap touching the surface will protect it from oxidizing. I learned this fun fact (along with it being called an alligator pear) from a nice article you can find here. Ingredients
- 2 avocados, chopped
- ¼ cup grape tomatoes, finely diced
- â…” cup feta cheese, cubed or crumbled
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- ¼ cup parsley, minced
- 1 clove garlic, crushed
- ¼ teaspoon oregano
- 4 kalamata olives, finely diced
- zest of ½ lemon
Instructions
