This is one of those crazy old recipes I’ve couldn’t wait to remake. I know the idea of gyro meat chips or crackers sound strange but they are super tasty and easy to make.It’s a little bit chewy like jerky as well as crunchy like a chip or cracker. And I used a bunch of spices to give it that gyro meat flavor. What’s not love?
I love them because they are a great low carb, high protein snack. If you are on a keto or carnivore diet, I think you will love them. Even if you aren’t and just want a high protein snack, this is the one for you. They are really filling on their own and you can even throw them on lettuce to make a gyro salad.
Recipe ingredients I used and substitutions.
The simple ingredients you need to make this recipe are lean ground beef, almond flour, egg white, fresh garlic, onion powder, marjoram, cumin, salt, black pepper, thyme and rosemary.
Ground Beef
It’s best to use lean ground beef for this recipe because you don’t want to deal with all the excess grease when meat cooks. But also because it shrinks quite a bit the more fat it has.
You can also try this with ground turkey or ground chicken. I have not tried it but I don’t see why it wouldn’t work.
Gyro Seasonings
Most people have all of these seasonings in their pantry. Marjoram is a little different so if you don’t have any you can substitute with half as much oregano (use ½ teaspoon) or just eliminate it.
And if you don’t have fresh garlic you can substitute with garlic powder. Remember 1 clove of fresh garlic equals ¼ teaspoon of garlic powder. So for this recipe you would use ½ teaspoon of garlic powder.
Almond Flour
I was trying to keep this recipe low carb. You could use regular flour but I really like the way almond flour goes in this recipe so I would suggest you don’t use anything else.
How to make meat chips (gyro flavored).
This is how to make meat chips with a gyro flavoring. You can play around with different seasoning blend to create other flavors.
Step 1: Preheat the oven to 325°F. Cover a baking sheet with parchment paper or a silicone mat. Spray the parchment paper with nonstick cooking spray and set aside.
Step 2: In a mixing bowl add egg white, ground beef, almond flour, crushed garlic and all of the spices. Mix well to combine but try to not overwork the meat. I used a big serving fork to work the spices into the meat. Below is what it looks like.
Step 3: Now you want to place the meat on the sprayed parchment paper. Get another piece of parchment paper or a piece of wax paper and spray with nonstick cooking spray. Place it sprayed side down on the meat and use a rolling pin to roll the meat mixture into a large thin rectangle.
Try to get the mixture uniform and thin so it cooks evenly. Then use a dull knife or a pizza cutter and score the meat mixture to make your chips. I got about 72 small chips out of this recipe. You can make them as big or as small as you want. Note that they shrink up after they cook so they will get smaller.
Just make sure not to cut all the way through but deep enough so that when they have baked you can break them apart easily.
Step 4: Place in the oven and bake until the meat is cooked through. This should take 25-35 minutes. Check on it close to the end to make sure it’s not burning.
Step 5: When done, let the baking sheet stay in the oven but turn the oven off. Leave it in there for 30 minutes. After that time it should be done. Take them out and break them into pieces. If you want them to be crunchier you can leave them in a bit longer.

Gyro Meat Chips Recipe (keto, high protein)
These low carb gyro meat chips are super easy and make for a delicious Paleo and high protein snack. Only 1g net carbs and 7g protein for 10 small crackers. Great on salads too!
Ingredients
- ½ pound lean ground beef
- ¼ cup almond flour
- 1 egg white
- 1 teaspoon marjoram
- ½ teaspoon thyme
- 1 teaspoon salt
- 1 teaspoon rosemary, crushed
- ½ teaspoon cumin
- ½ teaspoon black pepper
- 1 teaspoon onion powder
- 2 cloves garlic, crushed
Instructions
- Preheat oven to 325° F. Get out a baking sheet and cover with parchment paper or a silicone mat. If using parchment paper, spray with nonstick cooking spray and set aside.
- In a mimxing bowl add the ground beef, almond flour, egg white and crushed garlic and mix lightly with a fork. Sprinkle the seasonings over top and mix together until well combined. I used a big fork so that I didn't overwork the meat.
- Place the meat mixture on the cookie sheet and try to roll as thin as possible. To do this place a sprayed piece of wax paper or parchement paper on the meat to help the rolling pin not to stick. You want a thin, uniform layer so they cook evenly.
- Once you have the meat mixture as thin as possible, score lines with a pizza cutter but make sure not to go all the way through.
- Bake for 25-35 minutes until the meat is brown and cooked through. Watch towards the end to make sure they are not burning. If some are too brown then break them off and set aside. Then place back in the oven.
- Turn off the heat and let sit in oven for 30 more minutes or until the crackers are crispy to your liking. Take out and break into individual chips. This recipe made 72 small meat chips.
- Store in a seal container or baggie in the refrigerator.

Have you tried this with coconut flour? I know the amount would change but I’m trying to avoid oxalates and almonds are high in them. Thanks!

Hi R, I think the coconut flour would work and it would probably give it a bit of sweetness though. The only thing I am not sure of is the amount. Usually you use 1/4 cup of coconut flour for 1 cup of almond flour. You can try that ratio in this recipe. So you would use just 1 tablespoon of coconut flour.
Some other options would be use cauliflower rice and an extra egg white.
I have not tried either of these but I think they would both work. Good luck and I hope you like them!
