I love a good casserole. And on a keto diet they are pretty easy to make and definitely satisfying. So in an attempt to make another squash casserole with my husband’s garden produce, I came up with this delicious keto zucchini hamburger casserole idea.
It’s a combination of flavors from browned ground beef, green and yellow squash, a creamy cheesy low carb sauce and then that’s all topped with shredded cheese! It’s almost like a cheesy spaghetti casserole but with zucchini.
This is pretty easy to make and you can freeze portions for a quick keto lunch. I do this all the time with yummy keto casseroles like this.
Recipe ingredients I used.
The simple ingredients I used for this recipe was zucchini, cream, cream cheese, parmesan, cheddar cheese, egg and ground beef. As always if you want to add salt and black pepper please do. However I feel the cheeses add enough salt for my taste.
Zucchini
I used both green and yellow squash because I like the colors and we grew both this year. You can either one or both. You could also use spaghetti squash if you wanted or even cauliflower rice.
I chose to grate it in the food processor. I do think it tastes better in this shape as opposed to chunks of vegetable. If you have a spiralizer that would work too.
Ground Beef
I used lean ground beef beef because I didn’t want to have excess grease in this recipe. You could also use ground turkey if you want but I prefer the flavor ground beef.
Cream and Cheeses
I used heavy whipping cream in this recipe along with cream cheese and parmesan cheese to make the cream sauce. I don’t think you could substitute with anything else for these foods.
Cheddar Shredded Cheese
For the topping I used shredded sharp cheddar cheese. You can really use any shredded cheese you want. Other kinds of cheese to try are Monterey Jack, pepper jack, shredded gouda, gruyere or Swiss, or even mozzarella cheese.
How to make keto zucchini hamburger casserole.
Step 1: Preheat oven to 400°F. Spray a casserole dish with nonstick cooking spray and set aside.
Step 2: Using the grating blade for the food processor, grate the zucchini or squash. You can also use a hand grater but the holes should be larger so you get a bit of a noodle shape. You can also use a spiralizer.
Step 3: Get out a large nonstick skillet and heat to medium high heat. Add the hamburger and turn down to medium heat. Cook until all the meat has just browned a bit. If you want you can season with salt and black pepper. Take it out and set aside.
Step 4: Clean the skillet and then use that for the cream sauce. Add the cream cheese, cream and parmesan cheese. Whisk in the pan until well combined and the cheese has melted to make a cheesy cream sauce. Take off heat.
Step 5: Beat the egg in a small dish. Add about â…“ cup of the cream sauce and mix with the beaten egg. Then pour the egg mixture back into the sauce pan and whisk everything together.
Step 6: Add the browned hamburger and raw zucchini and mix well to the casserole dish. Spread out in an even layer and then spoon the cream sauce over top the ground beef mixture.
Step 7: Top the casserole with shredded cheese and place in the oven. Bake for 20 minutes until the shredded cheese is golden brown and melty. Let set for 5 minutes and serve. Store leftovers in an airtight container. Please scroll down to view the printable recipe card.
To make this delicious dish more of a meal you might want to serve it with a green salad. We just ate it as is. I spooned some leftovers in a small containers and frozen them for a low carb lunch.

Keto Zucchini Hamburger Casserole Recipe
This keto zucchini hamburger casserole is pure comfort food. A creamy, cheesy beef dish that has amazing flavors and is a great way to use squash from your garden. Fresh portions for a keto lunch.
Ingredients
- 1 pound ground beef (lean)
- 4 cups zucchini, grated or spiralized
- 1 egg
- 2 ounces cream cheese (¼ cup)
- ½ cup parmesan cheese
- ½ cup heavy cream
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F and spray a casserole dish with nonstick cooking spray.
- Get out a large nonstick skillet turn the heat to medium high heat. Add the ground beef and then turn it down to medium heat. Cook it until it has just started to brown. Take it off the heat and If you have excess grease, drain it then add to the casserole dish.
- Using a food processor with a grating blade, grate the squash. You can hand grate it if you have a large hole grater. You can also sprialize it to make a pasta shape. Add zucchini to the ground beef in the casserole dish and mix well. Spread out in the baking dish into an even layer.
- Clean out the large skillet and make the cream sauce by adding the cream cheese, heavy cream and parmesan cheese. Whisk until well combined and the cheese has melted. Turn off the heat.
- Get out a bowl and beat the egg. Add about â…“ cup of the cream sauce to the egg and whisk well. Then add the egg mixture back to the cream sauce and whisk well to combine. Pour over the ground beef mixture.
- Top the casserole with the cheddar shredded cheese and place in the preheated oven. Bake for 20 minutes or until the cheese has metled and is starting to brown. Take out and serve. Store leftovers in an airtight container.
